hello riders! welcome!

brioche and cookie dough in one yummy bread? this is what we are going to make today. the first time i've tried this bread was when i had a stop over in narita airport in japan. since then, i started looking the recipes online so i can make it on my own. quite few things to note is that, if you don't mix enough your dough, there will be a tendency the bread would be really dense, and that's not how it's supposed to be, so be very careful playing with the dough. :)

there are so many recipes you can find online, but i would really appreciate if you try mine. :)

ingredients:

for the cookie dough

  • 1/2 cup softened butter
  • 3/4 cup powdered sugar
  • 1 large egg
  • 1 tsp baking powder
  • 2 1/2 cup all purpose flour
  • 1 tsp vanilla extract

for the bread dough

  • 1 cup warm milk (110-115F)
  • 1 tbsp sugar (for the milk mixture)
  • 2 tsp instant dry yeast
  • 3 cups all purpose flour
  • 1/4 cup sugar
  • 1/2 cup softened butter
  • 1 tsp salt
  • 1 large egg
  • powdered sugar to sprinkle the top

directions:

  1. first, mix the cookie dough. add the softened butter into the bowl and cream until smooth
  2. add the powdered sugar and combine
  3. add the egg and mix
  4. add the baking powder, mix
  5. add all purpose flour and combine (sift the flour it will make a difference)
  6. then add the vanilla extract, combine
  7. move the cookie dough into the plastic wrap, wrap the cookie dough and refrigerate
  8. for the bread dough. add the warm milk into a bowl, add the sugar and yeast and stir, let the yeast rise for at least 8 to 11 minutes
  9. into a different mixing bowl, add the flour, sugar, softened butter, salt, egg and the yeast mixture and combine
  10. move the dough into a clean area and begin kneading the dough until smooth
  11. shape the dough into a ball and move into an oiled mixing bowl
  12. then let the dough rise until doubled in size, depending on the humidity, it could take up to 1.5 to 2 hours until the dough is ready
  13. once the dough is ready, deflate the dough and move into a clean area
  14. shape into a ball and divide the dough into 12 pieces
  15. shape the dough into a ball and cover again to let it rise for another 20 minutes
  16. meanwhile, take your cookie dough out of the fridge, and divide the cookie dough into 12 pieces
  17. flatten the cookie dough into a round shape
  18. at this point your bread dough should be ready
  19. take the bread dough, and place the round shape flattened cookie dough on top of the bread dough
  20. press the bottom carefully to seal
  21. then gently score the dough into a crisscross pattern
  22. once done, cover the bread and let the bread rest for another 20 minutes
  23. set the oven temperature to 350F
  24. bake the bread for 20 to 22 minutes rotating halfway through
  25. and you are done!

some useful tips:

if the dough is too sticky, add flour a tbsp at a time

if the dough is too hard, add few drops of water at a time

if the bread is too dense, you didn't knead the dough enough
