UBE BARS
what is an ube? it's basically a sweet potato that's in purple color. it has a nutty and vanilla kick taste to it, and a little sweeter than it's other potato relatives! when we were little, my grandma used to boiled lots of sweet potatoes, mashed and then add a condensed milk. sooooo delicious!
there are various ube recipes online.. an ube ice cream, ube cake, ube porridge, ube bread and more! today, let's make ube bars! it's creamy and sweet type of dessert that surely you will enjoy! :)
ingredients:
for the cake dough
- 1/4 cups lukewarm milk
- 3 tsp instant dry yeast
- 7 tbsp softened butter
- 4 tbsp granulated sugar
- 1 egg
- 2 cups flour
- 1 tsp salt
for the toppings
- 2 sticks of softened butter (16 tbsp total)
- 2 cups granulated sugar
- 2 eggs
- 2 tbsp lukewarm water
- 1 tsp vanilla extract
- 1 tbsp ube flavorings
- 1 1/4 cups flour
- 1 tsp salt
directions:
- to make the cake dough: into a bowl. combine milk and yeast. set aside. (make sure the milk is not too warm otherwise the yeast wont rise)
- into a different mixing bowl, combine butter, sugar and egg. beat until fluffy. set aside
- into a different mixing bowl, combine flour and salt
- then pour the flour mixture into the butter mixture. add in the yeast mixture and mix. i used a stand mixer to knead the cake dough but you can use hand too, it's pretty easy cake dough to knead
- flatten the cake dough in a prepared ungreased baking pan.
- cover and let the dough rest until ready to use
- pre heat the oven to 350F
- make the toppings: into a mixing bowl, add the butter then add some sugar, and mix. once combined, add more sugar and mix. repeat the process until you fully used up the sugar
- then add the eggs into the mixture and combine
- add the vanilla extract then combine
- add the ube flavor and combine (scraping the sides of the bowl when needed) set aside
- into a different mixing bowl, combine the flour and salt
- then pour the flour mixture into the butter mixture and combine
- pour the ube mixture over the cake dough, flatten the top then bake to pre heated oven for 30 to 35 minutes
- the cake will rise and fall and still liquid in the center when done baking
- sprinkle the top with powdered sugar and enjoy!
