hey riders!
in this episode in cook with sai borg, i am going to show you how to make adobong gulay (vegetables with vinegar and soy sauce). this is is a little similar to pork adobo (adobong baboy), except we don't put meat on this dish. it is purely vegetarian friendly and so good. you can make this dish on your preferred vegetables. i used squash, bitter melon, eggplant and bok choy in this dish, not only these vegetables are rich in vitamins and minerals, they are also the vegetables we used to grow in our backyard growing up, so it kind of reminds me of home. :) below are the list of ingredients. enjoy!
ingredients:
- 2 pcs bok choy
- 1 pc eggplant
- 1/2 of a whole bitter melon
- 1/2 sliced squash
- 3 cloves garlic
- 1/4 sliced of a whole onion
- 1 tablespoon vegetable oil
you will also need:
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1 cup water
salt (which i actually didn't have to use it because of the soy sauce i used) and pepper to taste.

I was really excited to try this recipe! It was easy to make and follow along with, and I felt super healthy eating it. I have never had bitter melon before, so that was a unique experience (I love trying new things!!)
