DUBLIN CODDLE [ VEGETARIAN ]
i have to make this meal for st. patrick's day, i have quite a few irish people (well, my husband which is half irish and that will make my daughter a 1/4 irish 🤣) in my household, and the last year where i didn't even care about making any irish meal in celebration for st. patrick's day i got in trouble! haha! so, i've been looking for some traditional irish meal recipe that doesn't require a lot of my time in the kitchen, (although, cabbage and corned beef are so easy to prepare), i wanted to make something vegetarian. dublin coddle is an irish stew, you can easily substitute the ingredients to make the stew vegetarian-- it consists bacon, sausage, onions, carrots, and potatoes. :) but below, are the ingredients you need to make a vegetarian dublin coddle stew.
ingredients:
- 1 tbsp oil (i used olive oil)
- 1 small onion chopped
- 3 vegetarian sausages (or more)
- garlic powder seasoning
- carrots
- potatoes
- 1 vegetable bouillon + 2 cups water (you can also use beef stock)
direction:
- heat the pan
- add oil into the pan
- sauté the onions
- add and cook the sausage
- season with garlic powder (you can also add some of your favorite seasonings)
- transfer the sausage into the baking pan
- then add the carrots, potatoes and vegetable bouillon and water or beef stock
- cover and bake to 425F for 45 minutes
- and enjoy!
this dish is super delicious! my daughter loved it! and i can't wait to make this dish again and again! :)
