DUBLIN CODDLE [ VEGETARIAN ]

i have to make this meal for st. patrick's day, i have quite a few irish people (well, my husband which is half irish and that will make my daughter a 1/4 irish 🤣) in my household, and the last year where i didn't even care about making any irish meal in celebration for st. patrick's day i got in trouble! haha! so, i've been looking for some traditional irish meal recipe that doesn't require a lot of my time in the kitchen, (although, cabbage and corned beef are so easy to prepare), i wanted to make something vegetarian. dublin coddle is an irish stew, you can easily substitute the ingredients to make the stew vegetarian-- it consists bacon, sausage, onions, carrots, and potatoes. :) but below, are the ingredients you need to make a vegetarian dublin coddle stew.

ingredients:

  • 1 tbsp oil (i used olive oil)
  • 1 small onion chopped
  • 3 vegetarian sausages (or more)
  • garlic powder seasoning
  • carrots
  • potatoes
  • 1 vegetable bouillon + 2 cups water (you can also use beef stock) 

direction:

  1. heat the pan
  2. add oil into the pan
  3. sauté the onions
  4. add and cook the sausage
  5. season with garlic powder (you can also add some of your favorite seasonings)
  6. transfer the sausage into the baking pan
  7. then add the carrots, potatoes and vegetable bouillon and water or beef stock
  8. cover and bake to 425F for 45 minutes
  9. and enjoy!

kimchi ramen

have you ever tried a kimchi ramen before? i guess it is not new in the market, but here's how i make mine..

 

ingredients:

  • 1 pack any ramen noodles
  • 1 egg
  • 1 stalk scallions chopped (for toppings)
  • 1 sausage
  • kimchi (as much as you like)
  • 1/4 of a whole onion (chopped)

directions:

  1. boil a water according to what the package of ramen of your choice instructed. usually, gourmet ramen like this, i add 3 cups of water
  2. once the water starts to boil, add the ramen noodles, sausage, onions, kimchi and stir. then add the egg, do not stir
  3. cover and cook for 4 minutes
  4. transfer to a bowl and top with scallions and serve

so simple and easy to make! everyone in the family is happy! hope you enjoy this recipe and thank you for coming back!

tomato feta cheese salad

hey guys! i'm sharing with you my tomato feta cheese salad today, i made it yesterday and husband kept telling me how delicious my this salad was. he would normally tell me "it's delicious" followed with "but, i would change the..." but this one, he said IT'S DELICIOUS! yay! so here is how to make it.

ingredients:

  • 1 stalk scallions (green onions)
  • 4 leaf of romaine lettuce
  • 7 pcs cherry tomatoes
  • meat of your choice (optional)
  • 2 tablespoon feta cheese
  • 1 teaspoon olive oil
  • 1/4 teaspoon parsley
  • pinch of ground black pepper
  • pinch of salt

directions:

  1. mix all the ingredients together and SERVE!
  2. can be eaten with a bread too.
  3. YUM
