hi guys!
in this episode, i am going to show you how i cook my own version of adobo. there are several ways to cook adobo, but i love mine because it is classic, easy, and fast to make. if you want to see how i made it, please go check my youtube channel. leave a comment as well and let me know how you guys like to cook your adobo. :)
ingredients:
- 1lb pork belly (cut into cubes)
- 4 bay leaves
- salt (to taste)
- pepper (to taste)
- 1/4 cup soy sauce (i only use philippine brand of soy sauce, as i notice the taste is a little different if i use other brands)
- 1/4 cup vinegar (preferably philippine brand)
- 1 tsp whole peppercorns
- 8 cloves of garlic (or more, depending on how you want to taste it like)
- 1 medium onion (chopped)
- 1 tbsp vegetable oil
directions:
- combine soy sauce, vinegar, pepper corns, bay leaves and pork belly and let it marinade for 30 minutes to an hour. i like to use pork belly by the way, but this recipe you can absolutely use any type of meat you like.
- after 30 minutes to an hour, the meat should be ready to cook. put some oil in a pot and sauté the onion and garlic ( i like to throw in the onion first since it cooks longer than the garlic).
- once ready, throw in the pork belly (minus the sauce). JUST the pork belly. :)
- mix all together and let it simmer until the meat is tender (according to your preference of tenderness) :P
- then, add the marinated sauce into the pot and stir.
- cover and let it cook until the sauce is thickened. (stirring occasionally)
- add salt and pepper according to your taste.
- and DONE! :D
