mixed berry muffins
how do you want to start your weekend mornings?

we usually don't eat breakfast but on weekends, we like to start our day with a freshly brewed coffee and some yummy perfect muffins! i have made a couple of muffins recipes such as banana muffins (click here: https://youtu.be/--TXIEL0HTE ) and cream cheese muffins (click here: https://youtu.be/9r9MCEwLE04 ) both are so yummy and soft and delicious in their own way. 1 ingredient that i added on this recipe made a lot of difference compare to the other 2 muffins i've made. also, i am going to use a frozen berries in this recipe, no need to thaw! :)
you can make these muffins the night before, or in the morning, -- who doesn't want to wake up with a super yummy smell of a freshly baked goods? so, good luck! :)

ingredients:
- 1 cup granulated sugar
 - 2 large eggs
 - 1 cup sour cream
 - 1/2 cup vegetable oil
 - 1 teaspoon vanilla extract
 - 1/4 teaspoon sea salt
 - 2 teaspoon baking powder
 - 2 cups all purpose flour
 - 1 1/2 cups frozen mixed berries
 

directions:
- pre heat the oven to 400F
 - into a mixing bowl, add the sugar and the eggs, beat together until creamy and fluffy
 - add the sour cream, the vegetable oil and the vanilla extract. then mix all together
 - then add the flour, salt and baking powder and combine carefully (use a whisk or a spatula to mix the batter)
 - once everything is well combined (without over mixing) add the mixed frozen berries. then fold using a spatula until the berries are well mixed into the batter
 - next, line the muffin tin with cupcake liners
 - spoon the batter into the muffin cups (evenly distribute, this will make 12 muffins)
 - bake for 20 minutes or until the toothpick inserted comes out clean
 - enjoy!
