egg fried rice

hi riders,

in todays episode in sai borg's cook with me, i am going to show you my easy recipe of fried rice. whether you crave for a fried rice or you have left over rice that you do not know what to make with it. just grab an egg and some vegetables and you're good to go. :)

let's gather all the simple ingredients i have found in my fridge.

ingredients:

  • 2 eggs
  • 1 cup cooked rice (left over)
  • 2 stalks green onions
  • 1/4 cup of onions
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon soy sauce
  • 1 tablespoon butter

directions:

  1. sliced the onions and set aside.
  2. beat the 2 eggs and set aside.
  3. smashed the cooked rice.
  4. pour the beaten eggs into the rice and mix together until combined.
  5. heat the pan into low heat.
  6. grease with oil.
  7. add the onions stir until the color turns transparent.
  8. add the mixed egg rice, stir.
  9. add the butter.
  10. add the sesame oil (you can skip sesame oil if you don't have one in hand) stir.
  11. add the soy sauce.
  12. and lastly the green onions. salt and pepper according to your taste.

spam musubi recipe | cook with sai borg

hey riders,

as of now, you are probably familiar with spam musubi. it is a rice and spam wrapped in nori. i never had it until 3 to 4 years ago when one of my friend came to visit and brought us a musubi, it was surprisingly super delicious and so simple to make. so today, i decided to make it and film it for your reference. i think when it comes to cooking, i like to explore a bit more.. that being said, i will show how i made my own recipe of this dish. now, i am not sure if i am the only one who ever made this version of musubi, i haven't been researching about it, so keep on watching! below are what you need to make this amazing dish.

ingredients:

  • 1 can spam (i'm using the tocino flavor, but use any flavor you like)
  • 2 cups of cooked rice
  • 1 cup of sliced lengthwise carrots
  • nori

you will also need:

  • 1 tablespoon soy sauce
  • 1 tablespoon mirin (sweetened rice wine)
  • 1 tablespoon sugar
  • 1 teaspoon cooking oil or cooking spray

spam musubi

stir fry bitter melon with egg | ginisang ampalaya na may itlog | cook with sai borg

welcome (back?) to my cookbook. today, i am going to show you how to make stir fried bitter melon with egg.  In the Philippines we call it ampalaya. bitter melon can be overpowering, but that doesn't mean it cannot be as delicious as many other vegetables. this type of dish is normally served during breakfast, it is so good with rice!  as we filipinos, we always have rice with every meal, but you can also enjoy this dish without rice. it is just as good.

so, here are the list of what you will need to enjoy it. good luck and let me know if you end up making this dish. :)

ingredients:

  • 1/2 portion of bitter melon (ampalaya)
  • 3 eggs (you can use as many, or less, up to you)
  • 2 cloves garlic
  • 1/8 cup sliced onion
  • 1 tablespoon vegetable oil
  • 2 pieces scallions
  • salt and pepper to taste

bitter melon

adobong gulay | filipino dish | cook with sai borg

hey riders!

in this episode in cook with sai borg, i am going to show you how to make adobong gulay (vegetables with vinegar and soy sauce). this is is a little similar to pork adobo (adobong baboy), except we don't put meat on this dish. it is purely vegetarian friendly and so good. you can make this dish on your preferred vegetables. i used squash, bitter melon, eggplant and bok choy in this dish, not only these vegetables are rich in vitamins and minerals, they are also the vegetables we used to grow in our backyard growing up, so it kind of reminds me of home. :) below are the list of ingredients. enjoy!

ingredients:

  • 2 pcs bok choy
  • 1 pc eggplant
  • 1/2 of a whole bitter melon
  • 1/2 sliced squash
  • 3 cloves garlic
  • 1/4 sliced of a whole onion
  • 1 tablespoon vegetable oil

you will also need:

  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1 cup water

salt (which i actually didn't have to use it because of the soy sauce i used) and pepper to taste.

easy cheesy potatoes

hey riders!

i have a new video on youtube--how to make cheesy potatoes. i had never had cheesy potatoes when i came to the US; it was Thanksgiving the first time i discovered this delicious dish and loved it. my mom in-law gave me her ingredients for cheesy potatoes and i decided to play around with it. she makes really really delicious cheesy potatoes and i don't ever think i can top it.

so, here is my own version and i hope you guys will give it a try.

ingredients:

  • 30 oz bag hash browns
  • 1/4 cup chopped onions
  • 2 cups sour cream
  •  10.5 oz cream of chicken and mushrooms soup
  • 1/4 cup melted butter
  • 2 cups shredded cheddar cheese
  • 1 teaspoon onion salt
  • 1/2 cup corn flakes

directions:

  1. pre heat the oven to 350F
  2. in a bowl, combined all the ingredients (except the cornflakes and melted butter) mix well and spread evenly
  3. top with corn flakes
  4. pour the butter on top
  5. bake for 35 to 40 minutes
  6. and DONE!
