welcome back! we have another requested recipe! we will be making mamon! it is a filipino version of sponge cake! it is spongy, delicious yet not too sweet! so GOOD LUCK!

ingredients:

  • 1/4 cup water
  • 7 egg yolks
  • 1 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 vegetable oil
  • 2 1/2 cake flour
  • 3 tsp baking powder
  • 1/2 cup orange juice
  • 1 tsp cream of tartar
  • 7 egg whites

directions:

  1. pre heat the oven to 350F
  2. line the tin molds with baking cups
  3. beat the egg whites for 1 minute, add the cream of tartar, beat for another minute, add the 1/4 cup of sugar, beat again for another minute, then add another 1/4 cup of sugar and beat until stiff peaks form. set aside
  4. into a different mixing bowl, combine the wet ingredients, 1/2 cup sugar, egg yolks, orange juice, water and the vegetable oil. mix well until a little frothy
  5. add the flour, the remaining sugar and the baking powder into the wet ingredients. combine and add the vanilla extract and continue to mix until completely incorporated. do not over mixed!
  6. add half of the egg whites into the batter and fold slowly. then add the remaining half of the egg whites and slowly fold until well combine. again do not over mixed
  7. fill up the tin mold about 3/4 full
  8. bake to 18 to 20 minutes or until the toothpick inserted comes out clean
  9. sprinkle with grated cheese
  10. and enjoy!

it's friday! that means new video is up!

this video recipe is requested by a good friend of mine, zwinglai! if you google "siopao" you can find a million of recipes online, i've tried quite a few times making siopao but it does not taste the same as to how it taste like the siopao i remember. i began to feel like they are hiding the "secret" ingredient. i also tried making changes such us adding some vanilla extract, or using bread flour instead of all purpose, using a butter instead of vegetable oil but the result is still not the same. so i gave up!

but when my friend requested the recipe, i thought i should give it a go. so, i tried playing around with the ingredients, and with just one attempt, i finally was able to make it perfect! so, i am going to reveal some ingredients that i used with you guys!

siopao means "hot buns" it is similar to the cantonese steamed bun called cha siu bao. i'm pretty sure most countries has different versions of siopao. we don't bake siopao, we steam it. there is also a sauce for siopao, however, i decided to make the filling more saucy so we can go ahead and forget about the sauce. as a mom, my time is super limited. :)

you can absolutely use any fillings you prefer! my personal favorite is adobo (here is the link for my adobo recipe.) but i will show you the fillings i used in this recipe.

i suggest you follow my recipe without substitutions. if you substitute any of them, i am not sure how it will turn out. so, below are some of the quick tips i can give you to make the siopao.

  1. flour- wheat flour is the key! you can check your asian grocery store and find the korean brand of wheat flour. it is the same flour you use to make dumplings, or ramen noodles
  2. pork lard- ditch the vegetable oil or butter. go to your nearest mexican grocery store and grab some pork lard. this will help change the consistency of the dough
  3. milk- instead of water, use milk. just do it. :)

ingredients:

  • 2 cups lukewarm milk (about 115f to 120)
  • 1 tbsp granulated sugar (for yeast mixture)
  • 2 1/2 tsp active dry yeast
  • 5 cups wheat flour (more for dusting)
  • 1/2 cup granulated sugar (for flour mixture)
  • 1 1/2 tbsp baking powder
  • 1/3 cup pork lard

for the filling:

  • 1 tbsp vegetable oil
  • 1/2 chopped onions
  • 1 tbsp chopped garlic
  • 1 cup cooked shredded chicken
  • 1 tbsp vinegar
  • 1 tbsp soy sauce
  • 2 tbsp oyster sauce
  • salt and pepper to taste
  • 2 tbsp sweet chili sauce

directions:

  1. into a mixing bow, add the lukewarm milk, sugar and yeast. combine and set aside.
  2. into a different bowl, combine the flour, sugar, baking powder and mix
  3. then add the pork lard and combine
  4. move the dough into a clean surface and start kneading the dough until soft and smooth. if the dough is super sticky add more flour 1 tbsp at a time
  5. shape the dough into a ball and place the dough into an oiled bowl
  6. cover with plastic wrap and let the dough rise for 1 hour or so, or until doubled in size
  7. at this point we will make the filling
  8. into a hot skillet, add the vegetable oil
  9. then, saute the onion and garlic
  10. once the onion turns transparent you can add the chicken then mix
  11. add the vinegar, soy sauce and oyster sauce then combine
  12. add salt and pepper to taste (be careful adding the salt as we already added soy sauce to it
  13. then add the sweet chili sauce and continue to mix until thickened but not too dry
  14. move the filling into a bowl and let it cool down
  15. cut the dough into small portions, you will make 16 pieces of siopao for this recipe
  16. flatten the dough, then add the filling
  17. secure the dough nice and tight to make sure it wont open up while it's cooking
  18. lay the dough on top of a parchment paper
  19. and repeat the process until you finished
  20. add the siopao into the steamer
  21. steam for 15 minutes
  22. and enjoy!

3 ingredient biscuits | cream biscuits

 

i didn't know it is possible to make biscuits with just 3 ingredients! it is surprisingly easy and fast. all you need to have is the southern biscuits self rising flour with the 2 other ingredients and you will end up having a delicious, yummy, soft and good biscuits. i actually just followed the recipes printed at the back of the packaging, it comes with 3 different recipes of biscuits which i will definitely try making soon. so GOOD LUCK!

  • 2 cups self rising flour
  • 1 tablespoon granulated sugar
  • 1 cup heavy whipping cream

directions: (you can watch the video recipe here:

  1. pre heat the oven to 450F
  2. into a mixing bowl, combine the self rising flour and sugar
  3. add the heavy whipping cream. mix well
  4. continue kneading the dough. dough will be stiff
  5. roll the dough about 1/2 inch think
  6. cut the dough using a biscuit cutter. i don't own one so i used the jar glass mouth to cut the biscuit
  7. spray your baking pan with oil, or use a parchment paper
  8. place the biscuits into the prepared baking pan
  9. bake the biscuits for 20 to 12 minutes or until the top turns golden brown
  10. apply butter on top
  11. and serve!

soft bread loaf

 

this bread loaf is super simple to make, it requires basic ingredients and it's soft, delicious with a touch of sweetness. although it is a lot easier to just buy a white bread loaf at the grocery stores, it is also satisfying to just make on your own. not only you know the quality of ingredients you use, it also leaves a good smell on your whole house and it doesn't have preservatives.

you can make a peanut butter and jelly with this bread, or add some butter, or dip into your coffee, or simply eat it alone. it's super yummy! so GOOD LUCK!

ingredients:

  • 1 cup milk (room temperature)
  • 2 1/2 teaspoon instant dry yeast
  • 1 egg
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 1/4cup butter (room temperature)
  • 3 1/3 cups all purpose flour

directions:

  1. in a mixing bowl, combine all ingredients
  2. knead using a stand mixer, you can knead this dough using your hand however it might be too sticky. you do not want to add more flour for this recipe
  3. transfer the dough into an oiled bowl, and cover
  4. let the dough rise until doubled in size about 1 1/2 hour
  5. punch the dough and cut in half
  6. roll the dough into a log and cut, make about 8 pieces
  7. roll the dough into a ball and transfer into a prepared oiled baking dish
  8. cover the dough and let the dough rise for another 30 minutes
  9. pre heat the oven to 350F
  10. brush the dough with egg wash
  11. bake for 20 minutes
  12. and enjoy!

  1. make sure all the ingredients are in room temperature
  2. to lessen your dough time rising, pre heat your oven to the lowest temperature, turn it off. cover your newly knead dough with a damp towel and put it inside the oven. usually with this process, my dough is ready in just 30 minutes

husband said this recipe is one of his favorites~ i have baked a banana muffins, banana bread and banana cake, so i thought i should try banana cupcakes. i don't have much in my pantry but i have a banana that is going bad soon, and before that happens, i needed it to rescue. although, it didn't look as good as the muffins i have baked, it is so delicious and super moist! i also added a cream cheese frosting since that what i have on hand. :) so GOOD LUCK!

for the batter

  • 1/4 cup brown sugar
  • 1/2 cup granulated sugar (white sugar)
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 ripe bananas
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 6 tablespoon butter (room temperature)
  • 3/4 cup sour cream
  • 3/4 cup milk
  • 1/4 tsp salt

for the frostings

  • 1 block cream cheese (room temperature)
  • 1/2 cup butter 8 tbsp (room temperature)
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

directions:

  1. pre heat the oven to 350F
  2. in a mixing bowl, add the brown sugar, granulated sugar and eggs. beat until fluffy
  3. add the milk, butter, sour cream and vanilla extract. combine
  4. add the flour, baking powder, baking soda and salt. combine
  5. add the mashed banana into the batter and combine. please do not over mixed
  6. pour the batter into a cupcake baking pan, about 3/4 full
  7. bake to preheated oven fro 20-22 minutes
  8. let the cupcake cool down completely before adding the frosting

to make the frosting:

  1. add the butter and cream cheese into a mixing bowl. combine
  2. add the powdered sugar and vanilla extract and combine well

to frost the cupcake:

  • simply add the cream cheese frosting on top of the cupcake and enjoy~

some tips:

  1. make sure all the ingredients you are using such as eggs, cream cheese, butter is at room temperature, or else it wont be as easy to mix.
  2. make sure you smash the banana into really fine pieces, so it wont leave a chunky bites on your cupcakes
  3. it is also important that your banana is super ripe. banana flavor can be a replacement
  4. bake at no more than 22 minutes, it will be a little jiggly so wait for the cupcakes to cool down
  5. do not apply the frostings if the cupcakes are not completely cooled down, your frostings will melt

the other day, i was thinking about what to film for today's video recipe, then i remember my husband telling me about my mixed berry muffins recipe (click here: https://youtu.be/fqzlRTqzDsU  that he really really liked it a lot! so i decided to take the same ingredients and i adjusted the amount of sugar since i am adding oreos to it, i didn't want it to be real sweet. and husband approved it again! it wasn't as moist as the mixed berry muffins but he said he couldn't really say anything except it's super delicious! :) so GOODLUCK!

  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup sour cream
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

we usually don't eat breakfast but on weekends, we like to start our day with a freshly brewed coffee and some yummy perfect muffins! i have made a couple of muffins recipes such as banana muffins (click here: https://youtu.be/--TXIEL0HTE  ) and cream cheese muffins (click here: https://youtu.be/9r9MCEwLE04 ) both are so yummy and soft and delicious in their own way. 1 ingredient that i added on this recipe made a lot of difference compare to the other 2 muffins i've made. also, i am going to use a frozen berries in this recipe, no need to thaw! :)

you can make these muffins the night before, or in the morning, -- who doesn't want to wake up with a super yummy smell of a freshly baked goods? so, good luck! :)

happy friday! i have a treat for you before the week ends. i made a coffee cupcakes and i added a bunch of coffee in it! :D i do recommend making the cupcakes the night before, so in the morning, you'll have a nice caffeine waiting for you in your kitchen counter (only if you can wait). pair with your hot coffee and you're good for the day!

ingredients:

for the cupcakes;

  • 2 packets of instant coffee (you can honestly add 1 more packet if you want a stronger coffee flavor)
  • 1 cup hot water
  • 3 cups all purpose flour (sifted)
  • 2 cups granulated sugar
  • 2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup vegetable oil
  • 3/4 cup milk
  • 2 eggs
  • 2 teaspoons vanilla extract

for the frosting;

  • 1/2 cup butter
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 1/2 teaspoon vanilla extract
  • 1 packet of instant coffee
  • 1 tablespoon cocoa powder

directions:

  1. add 1 packet of instant coffee to a cup of hot water, and combine well until the coffee is dissolved then set aside
  2. in a separate bowl, add the sifted flour, sugar, salt, baking powder, baking soda, instant coffee, nutmeg and cinnamon. combine all dry ingredients
  3. then add the wet ingredients, starting of the coffee mixed, then the milk, egg, vanilla extract and the vegetable oil, mix until smooth but DO NOT over mixed the batter
  4. pour the batter mixture into the cupcake mold baking pan about 3/4 full
  5. bake the cupcakes to 350F for 25 to 30 minutes or until toothpick inserted comes out clean
  6. make the frosting while the cupcakes are in the oven-- cream the butter until fluffy, then add the powdered sugar and combine well
  7. add the instant coffee and the cocoa powder and combine well
  8. add the vanilla extract and 1 tbsp milk
  9. if the mixture is too runny don't add the remaining tablespoon of milk, or add more if it's too thick
  10. make sure to cool down the cupcakes completely before adding the frosting
  11. and you are high in caffeine! just kidding! ENJOY!

welcome back! today, we will be making a cream cheese muffins! there are so many cream cheese flavor muffin recipes available online, whether it is raspberry cream cheese muffins, strawberry cream cheese muffins, banana cream cheese muffins, and many more! so i thought, why not just make cream cheese muffins? so here we are! :) i made these cream cheese muffins thinking it might fail, but everyone ended up loving it. for as long as you don't over baked them, and let it rest completely, you will have that moist, creamy, lightly sweetened (but not crazy sweet) cream cheese muffin!

sai's tip to baking cream cheese muffins:

  • make sure all the ingredients are at room temperature, it is easier to mix
  • for best results and to avoid a lumpy batter, sift the flour and the baking powder
  • use a muffin liners, so the muffin wont stick into the pan
  • these recipe will make 6 muffins so don't expect for more! :P

hey riders!

today, i am going to show you how to make ENSAIMADAS! -- if you've never heard from it, well, now you do! :P it is a really delicious pastry like bread that is originally from mallorca, spain. or i heard it is still in debate where really is this bread originally from! but, we are not here to do that.. i would say, we were colonized but the spaniards for 333 years, so no doubt they were the one who brought that delicious bread to my country. :P

there are so many different types or ingredients you can use to make ensaimadas now a days, specially in the philippines, i found out they put cheese on their ensaimadas, which i honestly find it weird, although it is still very delicious! i just wish they wouldn't call it ensaimadas because it is near nowhere close as the real deal ensaimadas.

so now, i am going to show you, how i make my ensaimadas, i tried to make sure i get the right consistency and the right texture as i remember growing up. this bread is supposed to be in a spiral shape and covered with lots and lots of powdered sugar.

2 ingredients i skipped from this recipe are the lard and some old ensaimada dough or sourdough. i used butter and yeast instead. the result is still yummy!

ingredients:

for the yeast mixture:

  • 2/3 cups lukewarm milk
  • 1 tsp granulated sugar
  • 1 tsp yeast

for the dough:

  • 1 1/2 cup all purpose flour (more flour if needed)
  • 1/2 tsp salt
  • 2 tablespoon granulated sugar
  • 1 egg
  • 1/2 cup softened butter

for the filling:

  • 1 stick softened butter
  • 1 cup granulated sugar

for dusting:

  • powdered sugar

directions:

  1. in a bowl, add the milk (lukewarm about 110F-115F) the sugar and yeast. stir and set aside
  2. in a different mixing bowl, add all the dry ingredients
  3. once the yeast mixture is ready pour into the flour mixture with butter and egg
  4. knead the dough until smooth. if it needs more flour add more. just please make sure the dough is still soft and fluffy after kneading
  5. cover the dough and let the dough rise for 2 hours
  6. combine the butter and sugar together, beat until it forms fluffy consistency
  7. cut the dough in half and using a rolling pin, flatten the dough into a rectangle shape
  8. apply butter mixture into the flattened dough, make sure to leave some space around
  9. roll the dough and form into a spiral shape or snail shape
  10. move the dough to a baking pan, make sure to have enough space for the dough to expand
  11. cover the dough with towel and let the dough rise for another 1 hour. or you can bake it right away and i don't see any difference really
  12. bake the bread to 350F for 20-25 minutes or until golden brown
  13. dust the ensaimada bread with powdered sugar
  14. ENJOY!

some tips:

  1. lay all the ingredients down in the counter before you start the process, so that the eggs will cool down to right temperature and so does the butter
  2. before baking your bread, apply some butter on top of your bread, this is optional but that's what i did
  3. make sure the yeast has doubled in size, if not your yeast mixture is dead
  4. eat all of them at once! don't leave some for someone who aren't home! jk
