tortellini pasta salad

 

probably the simplest pasta salad you can make. :) i'm not a pasta person, but this recipe absolutely captured my heart and i will make it again and again. especially since little one LOVED it! well, husband, too! so GOODLUCK!

 

tortellini

 

ingredients:

  • 1 pack tortellini (any brand)
  • 1 cup sliced cherry tomatoes
  • 1/4 cup sliced red onion
  • 1 cup sliced mozzarella cheese
  • 1/2 cup pesto (any brand)

directions:

  1. add water in a pot. (follow the directions in the back of the tortellini package)
  2. while the water is boiling, prepare the other ingredients. make sure you wash the vegetables before cutting them
  3. cut the cherry tomatoes in half, same with the onions
  4. cut the mozzarella cheese into small cubes.you can use fresh mozzarella too if you have one in hand
  5. drain the tortellini pasta
  6. add into the mixing bowl
  7. then add the other ingredients including the pesto
  8. combine and serve!
  9. enjoy!

someone can't resist!

 

salted caramel fudge

 

ooey gooey, gooey ooey is what i like to describe this dessert! it's soft, it's chewy and it's creamy! it's also almost flourless since i'm only using 2 tablespoon of flour in this recipe. you heard me right there! if you know me well enough, you know how much i love my carbs! yup! i usually use so much flour as one of my ingredients in most of my recipes! so, GOOD LUCK!

ingredients:

  • 400 grams nutella
  • 3 tbsp flour
  • 2 large eggs
  • 1 tbsp cocoa powder
  • 2 tbsp hot milk
  • 1 cup chocolate chips
  • salt (for sprinkle)

for toppings:

  • 1 cup whipping cream
  • 1 cup caramel candy bars

directions:

  1. pre heat oven to 350F
  2. into a mixing bowl, combine the eggs and nutella
  3. add the cocoa powder and flour, then mix well
  4. add the hot milk. mix well
  5. add the chocolate chips. mix
  6. next, pour half of the batter into the prepared pan
  7. add the caramel candy bars
  8. then pour the rest of the remaining batter
  9. bake for 20-25 minutes
  10. while the fudge is in the oven, prepare the caramel topping
  11. combine the caramel candy bars and whipping cream in a safe microwavable bowl
  12. microwave the mixture in a high power for 1 minute. stir
  13. pour the caramel topping on top of the cake fudge
  14. sprinkle some salt
  15. and ENJOY!

some tips for this recipe:

  1. make sure to cool down the cake for at least 10 minutes before adding the caramel toppings
  2. you can indulge right away (who would ever want to wait?) but i suggest to let the goodies rest for at least 30 minutes for the toppings to cool down
  3. do not over bake.
  4. i don't know what i want to call this recipe, fudge cake? caramel fudge? salted caramel fudge bars? if you ended up trying this recipe, let me know what you think would be the best name for this goodies. :)

summer is honestly my least favorite season, unless i am around a nice beaches with my favorite cocktail drinks and a coconut juice! :P since i am stuck at home due to this pandemic, i've been doing an excessive indulgence of ice cream!! i have 3 full tubs flavor of ice cream stuck in the freezer since i realized how simple it is to make. literally 3 to 4 ingredients and you can have an ice cream ready in just 6 hours! so, good luck!

ingredients:

  • 2 cups heavy whipping cream
  • 1 can condensed milk
  • 1 block (14oz) cream cheese softened
  • 1 teaspoon vanilla extract

directions:

  1. combine heavy whipping cream, vanilla extract and cream cheese into a mixing bowl. beat until creamy
  2. add the condensed milk and mix until creamy
  3. pour the mixture into the prepared tub and freeze for at least 6 hours or overnight
  4. enjoy!

mixed berry muffins

 

how do you want to start your weekend mornings?

we usually don't eat breakfast but on weekends, we like to start our day with a freshly brewed coffee and some yummy perfect muffins! i have made a couple of muffins recipes such as banana muffins (click here: https://youtu.be/--TXIEL0HTE  ) and cream cheese muffins (click here: https://youtu.be/9r9MCEwLE04 ) both are so yummy and soft and delicious in their own way. 1 ingredient that i added on this recipe made a lot of difference compare to the other 2 muffins i've made. also, i am going to use a frozen berries in this recipe, no need to thaw! :)

you can make these muffins the night before, or in the morning, -- who doesn't want to wake up with a super yummy smell of a freshly baked goods? so, good luck! :)

ingredients:

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup sour cream
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 2 teaspoon baking powder
  • 2 cups all purpose flour
  • 1 1/2 cups frozen mixed berries

directions:

  1. pre heat the oven to 400F
  2. into a mixing bowl, add the sugar and the eggs, beat together until creamy and fluffy
  3. add the sour cream, the vegetable oil and the vanilla extract. then mix all together
  4. then add the flour, salt and baking powder and combine carefully (use a whisk or a spatula to mix the batter)
  5. once everything is well combined (without over mixing) add the mixed frozen berries. then fold using a spatula until the berries are well mixed into the batter
  6. next, line the muffin tin with cupcake liners
  7. spoon the batter into the muffin cups (evenly distribute, this will make 12 muffins)
  8. bake for 20 minutes or until the toothpick inserted comes out clean
  9. enjoy!

white chocolate chip banana muffins

let's make a white chocolate chips banana muffins! i gotta say, this has to be the best banana muffins ever! i've had some banana muffins of course and my favorite are the ones that you can get from the fresh market. when it comes to pastries, breads, muffins, cakes, etc. fresh market is my go to store. however, they can be a little bit pricey. so here, i will show you my banana muffins recipe that everyone in the house approved! good luck!

ingredients:

  • 1 1/2 cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 3 super ripe bananas
  • 6 tbsp coconut oil
  • 2/3 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • 1 cup white chocolate chips

directions:

  1. into a mixing bowl, add the salt, baking powder, baking soda, nutmeg and cinnamon
  2. whisk all together, then add the flour and brown sugar, mix until combined. set aside
  3. into a different mixing bowl, add the banana and smash it up
  4. add the egg, coconut oil and the milk then mix well
  5. then add the flour mixture into the liquid mixture and mix until well combined
  6. once everything is incorporated, add the vanilla extract and mix
  7. add the white chocolate chip and mix using a spatula
  8. place a muffin cup into a baking pan
  9. spoon the batter into the muffin tin, about 3/4 amount
  10. bake the muffins to 350F for 30 to 40 minutes, or until the toothpick inserted comes out clean
  11. ENJOY!
