have you tried making recipes using sodas? i have used an orange soda to bake cakes before, a sprite for making prawns and dark beer for pot roasts, but a coke for filipino adobo? it's kind of new for me. but i've seen so many people have made this adobo so i have to try it. usually, a filipino adobo consists with just few ingredients, a soy sauce, vinegar, garlic, bay leaves and salt and pepper to taste. there are various ways to make an adobo, it really depends on how you like it to be. at the end of the day, it's your taste is what's important.

ingredients:

  • 2 pcs chicken breasts (you can use any cut, bone-in is the best)
  • 1 tbsp olive oil (any oil will do)
  • ginger (depending on your taste)
  • garlic (add lots if you like garlic)
  • 1 can of small coca cola soda 7.5oz
  • 4 pcs bay leaves 
  • 1/2 cup vinegar (lower to 1/4 if you are not a sour person)
  • 1/4 cup soy sauce 
  • 1 tbsp brown sugar
  • ground black pepper (to taste)
  • salt (to taste)

directions:

  1. heat a wok
  2. add the oil and sauté the ginger and garlic
  3. it's ready when you smell the aroma
  4. then add the chicken and stir
  5. add the coca cola and stir slowly then cover and let the chicken cooked for about 25 to 30 minutes in medium heat. stir occasionally.
  6. once the chicken is cooked, remove from the wok and season the sauce
  7. add the bay leaves, vinegar, soy sauce, sugar, and black pepper. make sure you taste the sauce to your likeness. 
  8. bring the sauce to a boil 
  9. move the sauce to a safe bowl
  10. place the cooked chicken back to the wok, then add the sauce. set the heat to high
  11. stir to combine then cover and let it simmer until the sauce thickened 
  12. take the lid off and keep stirring until the sauce dried out
  13. and its ready to served!

MUNG BEANS WAY OF COOKING

love mung beans but don't know how to enjoy it? or you need an ideas on how to cook this beans? mostly, you see this beans as a stuffing to a delicious dessert, or bread. some are sautéed with shrimp and top over rice. many are mix with crunchy deep fry pork belly. i like to enjoy mung beans with some vegetables and coconut milk. occasionally, i like to add some tofu as well but since i don't have tofu i will just make this with the vegetables that i have in hand.

ingredients:

  • 1/2 cup mung beans (i am using split beans but doesn't really matter)
  • 1/4 sliced onions (you can add more if you like)
  • 1 potatoes
  • 1/2 slice green tomatoes
  • 1/2 slice red tomatoes
  • some broccoli, cauliflower, and carrots
  • 2 cups water + more
  • 1 tbsp olive oil (vegetable oil is okay too)
  • 1 tbsp fish sauce
  • 1 tsp sesame oil
  • 1 tsp garlic powder (optional)
  • salt and pepper to taste
  • 1 can coconut milk (small)

directions:

  1. soak the beans in water for 30 minutes
  2. then prepare all the ingredients
  3. heat the pan
  4. add the oil
  5. saute the onions and tomatoes
  6. once the onions turns translucent add the beans and mix
  7. add 2 cups water stir and cook for 12 minutes in low medium heat
  8. add the potatoes and carrots, mix, cover and cook for another 5 minutes
  9. add the coconut milk and stir
  10. add the rest of the vegetables mix
  11. add the fish sauce and garlic powder and stir
  12. add the ground black pepper and the sesame oil
  13. cover, turn the heat off and let it cook for another 5 minutes
  14. and you are done!

DUBLIN CODDLE [ VEGETARIAN ]

i have to make this meal for st. patrick's day, i have quite a few irish people (well, my husband which is half irish and that will make my daughter a 1/4 irish 🤣) in my household, and the last year where i didn't even care about making any irish meal in celebration for st. patrick's day i got in trouble! haha! so, i've been looking for some traditional irish meal recipe that doesn't require a lot of my time in the kitchen, (although, cabbage and corned beef are so easy to prepare), i wanted to make something vegetarian. dublin coddle is an irish stew, you can easily substitute the ingredients to make the stew vegetarian-- it consists bacon, sausage, onions, carrots, and potatoes. :) but below, are the ingredients you need to make a vegetarian dublin coddle stew.

ingredients:

  • 1 tbsp oil (i used olive oil)
  • 1 small onion chopped
  • 3 vegetarian sausages (or more)
  • garlic powder seasoning
  • carrots
  • potatoes
  • 1 vegetable bouillon + 2 cups water (you can also use beef stock) 

direction:

  1. heat the pan
  2. add oil into the pan
  3. sauté the onions
  4. add and cook the sausage
  5. season with garlic powder (you can also add some of your favorite seasonings)
  6. transfer the sausage into the baking pan
  7. then add the carrots, potatoes and vegetable bouillon and water or beef stock
  8. cover and bake to 425F for 45 minutes
  9. and enjoy!

one pot meal in a rice cooker vegetarian meal

many people think that rice cooker can only be use for making a rice. rice cooker steam and boil rice so therefore, it can also make some other dishes. so, today, i am showing you one way i enjoy my dish using only the rice cooker. :)

ingredients : for this meal

  • 2 cups rice + water to soak the rice
  • 1/2 medium size carrots
  • 1 medium size potatoes
  • 1/4 of a whole onion
  • ginger | optional
  • 1/2 chayote
  • 1 tbsp mirin
  • 2 tbsp soy sauce
  • t tbsp rice vinegar
  • 1 tsp sesame oil
  • garlic powder
  • furikake seasoning
  • water
  • cilantro or scallions for toppings

you can absolutely replace all the ingredients with what you prefer except green leafy- although, you can add the green leafy vegetables as a topping. it will get mushy if you add them with the rest of the ingredients in the rice cooker.

instructions :

  1. soak the rice with water for 30 minutes 
  2. wash / clean the vegetables and cut them into small cubes
  3. disregard the water from the soaked rice
  4. add the rice into the rice cooker followed by the vegetables 
  5. add the seasoning
  6. place the rice cooker pot into the rice cooker base and cook just like how you cook your regular rice 
  7. enjoy!

i get a lot of question if they can bake the "japanese cheesecake using a rice cooker recipe" from my website, and so today, it will answer the question. i baked the cheesecake yesterday with some little twist with the ingredients! japanese cheesecake is supposed to be so soft and jiggly and of course yummy! this doesn't disappoint! so i hope you will love it as well as i do~ :)

ingredients:

  • 1 block cream cheese at room temperature
  • 1/4 cup sugar
  • 2 eggs (separate the yolks and whites)
  • 3/4 cup milk at room temperature
  • 3/4 cup flour
  • 1 tsp baking powder

directions:

  1. pre heat the oven to 350F
  2. into a bowl, add the cream cheese. mix
  3. slowly add the sugar. mix
  4. add the egg yolks. 1 at a time. mix
  5. add the egg whites. mix
  6. add the flour and baking powder. mix
  7. pour into an oiled baking pan. set aside
  8. into a different baking pan, add 1/4 cup water
  9. place the cake pan on top of the water bath pan
  10. bake to 25 to 35 minutes or until the toothpick inserted to the cake comes out clean
  11. and enjoy~

no- just kidding! but seriously, these baked cake doughnuts are so so good! what's not awesome about not deep frying your doughnuts? could be a little slightly different but ultimately you're going to love them! best part? you can add your own toppings! it's fun to make!

ingredients:

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 3/4 cup sugar
  • 1/2 tsp nutmeg (reduced to 1/4 tsp if you don't like the strong flavor)
  • 1/2 tsp ground cinnamon (reduced to 1/4 tsp if you don't like the strong flavor)
  • 1 tsp salt
  • 3/4 cup milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tbsp vegetable oil
  • some toppings of your choice

directions:

  1. pre heat the oven to 325F
  2. in a large bowl, mix flour, sugar, baking powder, nutmeg, cinnamon and salt
  3. stir in milk, eggs, vanilla extract, and vegetable oil. beat together until well blended
  4. lightly grease the doughnut pan
  5. fill each doughnut cup approximately 3/4 full
  6. bake for 8 to 10 minutes in the pre heated oven
  7. allow to cool down the doughnuts before removing from pan
  8. put toppings and enjoy!
