hey riders!
how's everyone doing? this recipe that i'm going to share with you is one of my favorite food of all time. it's a japanese cheesecake! i've made this recipe a million times already, and not only the ingredients are so simple, it is also not difficult to make, and you read that right, we are using a rice cooker! :D so let's dive in!
ingredients:
- 1 block cream cheese
- 2 eggs (separate the egg whites and yolks)
- 3/4 cups pancake mix
- 3/4 cups whipping cream
- 1/4 cup granulated sugar
- melted butter (for brushing)
- powdered sugar
directions:
- combine pancake mix, cream cheese, and egg yolk, whisk using a hand mixer until fully combined.
- add heavy cream in two parts, whisking well in between.
- in a separate bowl, whisk egg whites until firm peaks form, then add granulated sugar in three parts, whisking well in between.
- slowly fold egg whites into pancake mixture in three parts and stir until fully incorporated.
- grease rice cooker bowl with melted butter and add cheese cake mixture. Cook for 70 minutes.
- once cooked turn the cake onto a plate, sprinkle with powder sugar.
- DONE!
