today, i am going to show you how to make ENSAIMADAS! -- if you've never heard from it, well, now you do! :P it is a really delicious pastry like bread that is originally from mallorca, spain. or i heard it is still in debate where really is this bread originally from! but, we are not here to do that.. i would say, we were colonized but the spaniards for 333 years, so no doubt they were the one who brought that delicious bread to my country. :P

there are so many different types or ingredients you can use to make ensaimadas now a days, specially in the philippines, i found out they put cheese on their ensaimadas, which i honestly find it weird, although it is still very delicious! i just wish they wouldn't call it ensaimadas because it is near nowhere close as the real deal ensaimadas.

so now, i am going to show you, how i make my ensaimadas, i tried to make sure i get the right consistency and the right texture as i remember growing up. this bread is supposed to be in a spiral shape and covered with lots and lots of powdered sugar.

2 ingredients i skipped from this recipe are the lard and some old ensaimada dough or sourdough. i used butter and yeast instead. the result is still yummy!

ingredients:

for the yeast mixture:

  • 2/3 cups lukewarm milk
  • 1 tsp granulated sugar
  • 1 tsp yeast

for the dough:

  • 1 1/2 cup all purpose flour (more flour if needed)
  • 1/2 tsp salt
  • 2 tablespoon granulated sugar
  • 1 egg
  • 1/2 cup softened butter

for the filling:

  • 1 stick softened butter
  • 1 cup granulated sugar

for dusting:

  • powdered sugar

directions:

  1. in a bowl, add the milk (lukewarm about 110F-115F) the sugar and yeast. stir and set aside
  2. in a different mixing bowl, add all the dry ingredients
  3. once the yeast mixture is ready pour into the flour mixture with butter and egg
  4. knead the dough until smooth. if it needs more flour add more. just please make sure the dough is still soft and fluffy after kneading
  5. cover the dough and let the dough rise for 2 hours
  6. combine the butter and sugar together, beat until it forms fluffy consistency
  7. cut the dough in half and using a rolling pin, flatten the dough into a rectangle shape
  8. apply butter mixture into the flattened dough, make sure to leave some space around
  9. roll the dough and form into a spiral shape or snail shape
  10. move the dough to a baking pan, make sure to have enough space for the dough to expand
  11. cover the dough with towel and let the dough rise for another 1 hour. or you can bake it right away and i don't see any difference really
  12. bake the bread to 350F for 20-25 minutes or until golden brown
  13. dust the ensaimada bread with powdered sugar
  14. ENJOY!

some tips:

  1. lay all the ingredients down in the counter before you start the process, so that the eggs will cool down to right temperature and so does the butter
  2. before baking your bread, apply some butter on top of your bread, this is optional but that's what i did
  3. make sure the yeast has doubled in size, if not your yeast mixture is dead
  4. eat all of them at once! don't leave some for someone who aren't home! jk

 

texas roadhouse dinner rolls copycat

hey riders!

i'm pretty sure you've heard about how delicious the texas roadhouse dinner rolls before! i am so obsessed! so, in case you haven't been to try out their rolls yet, try this recipe! :)

ingredients:

  • 1 1/4 cup lukewarm milk (110f to 115f - too hot may cause the yeast to die)
  • 1/2 cup honey
  • 2 1/4 teaspoon yeast
  • 1 egg
  • 4 tablespoon melted butter
  • 1 teaspoon salt
  • 4 cups flour

for the butter:

  • 1 stick softened butter
  • 1/4 cup honey
  • 1/4 cup powdered sugar
  • 1 tablespoon ground cinnamon

directions:

  1. into a mixing bowl, combine the warm milk, the honey and the yeast. stir and set aside. let the yeast rise. it may take between 8 to 11 minutes. if the yeast don't rise, repeat the process, please check your milk temperature too hot or not hot enough may cause for the yeast to not rise.
  2. after the yeast mixture is ready, add the egg, the melted butter, all purpose flour, and salt. if using a stand mixer, add the hook and start kneading until the dough becomes soft and combined. if using a hand, combine the mixture using a spatula then transfer the dough into a clean surface area and start kneading the dough until soft. if the dough is wet, add flour a tsp at a time, if the dough is dry/hard add water a tsp at a time.
  3. once done kneading, shape the dough into a ball and move the dough into a buttered or oiled bowl.
  4. let the dough rise until doubled in size. usually between 1 to 2 hours
  5. once the dough is ready, deflate the dough and move into a clean surface area
  6. roll the dough into a log
  7. cut the dough into 4 parts
  8. divide the dough again into equal parts, you can make a dozen or 16 pcs or depending on the size you prefer
  9. shape the dough into a ball
  10. and move the dough into an oiled prepared baking pan
  11. cover and let the dough rise again for another 10 to 15 minutes
  12. pre heat the oven to 350F
  13. once the dough is ready, bake to pre heated oven for 13 minutes
  14. after 13 minutes, take the bread out from the oven, brush the top of the rolls with melted butter
  15. then bake again for another 3 to 4 minutes
  16. and you are done!

for the butter spread:

  1. combine all the ingredients and move into a container.

pandesal dinner rolls

hey riders!

the long wait is over! i finally made the famous filipino "dinner" rolls called pandesal. it is very similar to dinner rolls we usually serve here in the US. however, in the philippines, these rolls are actually served for breakfast, it is so good dipped in the coffee! you can also put fillings such as sandwich spread and filipino star margarine. :)

ingredients:

  • 1 1/2 tsp instant dry yeast
  • 3 tbsp granulated sugar
  • 2/3 tsp salt
  • 1 egg
  • 3/4 cup lukewarm milk (110-115F)
  • 1/4 (4 tbsp) stick melted butter
  • 2 3/4 cups all purpose flour
  • 4 tbsp condensed milk
  • bread crumbs

directions:

  1. in a bowl, mix together the milk, teaspoon sugar and yeast. stir and set aside. let it rise for about 5-8 minutes
  2. in a different bowl. combine the dry ingredients, flour, remaining sugar and salt. mix well
  3. add in the egg, the melted butter, condensed milk and the yeast milk mixture and start kneading the dough using a stand mixer until smooth and elastic
  4. cover the prepared bowl with butter or oil add in the dough and cover with plastic wrap
  5. let the dough rise until doubled in size. about 1-2 hours
  6. when the dough is ready, deflate the dough and divide into portions. i was able to make 12 pcs
  7. shape th dough into round or a small ball
  8. move the dough into a prepared baking pan and cover with plastic wrap, then let the dough rise again for about 30 minutes
  9. preheat the oven to 325F
  10. bake the rolls for 18 minutes
  11. after 18 minutes, turn the temperature to 375F and bake for another 2-3 minutes or until the topd of the rolls turns golden brown
  12. and enjoy!

cinnamon rolls

the best cinnamon rolls ever! it's gooey, soft and delicious! you don't need all the crazy ingredients and styles to make this rolls, everything is pretty basic and so let's get into the process! :)

ingredients:

for the dough:

  • 2 3/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 stick butter (4 tablespoon)
  • 1 egg
  • 1 packet instant dry yeast
  • 3/4 cup warm milk (about 110F)

 

cinnamon

for the filling:

  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 stick butter (4 tablespoon)
  • 1/2 tablespoon cornstarch

for the cream cheese toppings:

  • 1 block cream cheese
  • 1/3 cup powdered sugar
  • 2 tablespoon milk (or more)
  • 1 teaspoon vanilla extract

directions:

  1. combine all the ingredients into a big bowl
  2. knead the dough until smooth (using a stand mixer) if you are using your hands, good luck! :D no seriously, i recommend using a stand mixer if you have one. :)
  3. apply butter or oil into a bowl where you put the dough to let it rise
  4. shape the dough into a ball and let the dough rise until doubled in size. about 1 to 2 hours
  5. while the dough is rising, combine all the filling ingredients
  6. once the dough has doubled in size, flatten the dough using a rolling pin and shape the dough into a rectangle
  7. apply butter and then sprinkle the fillings on top. spread evenly
  8. roll the dough into a log and cut evenly about 10 to 12 pieces
  9. apply butter or oil into a baking dish
  10. add the rolls into the baking dish and let the rolls rise again for 30 minutes
  11. pre-heat the oven to 350F
  12. after 30 minutes bake the rolls for 20 minutes
  13. while the bread is baking
  14. prepare the cream cheese topping
  15. add all the topping ingredients into a bowl and mix well
  16. if you want the toppings to be thicker add less milk, if you want it to be thinner add more milk
  17. pour the cream cheese toppings on top while the rolls are still hot
  18. and enjoy!

pound cake crust cheesecake

so the other day, i made a pound cake, and it was a huge one! i got some leftover and i thought i will try to make a cheesecake using the pound cake as a crust! well, friends and family loved it! so let's start! :)

 

pound cake

ingredients:

  • 2 cups of crumbled pound cake
  • 1 block cream cheese (room temperature)
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract

cake crust

 

directions:

  1. pre-heat the oven to 350F
  2. prepare the pound cake crust, press down the cake into the bottom of the pan
  3. bake to the pre-heated oven for 8 minutes
  4. cool down completely
  5. in a bowl, beat the cream cheese then add the sugar and beat again until creamy
  6. add one egg and beat again until the yolk mix well to the batter, then add the other egg and beat until well combine
  7. add the vanilla extract and mix well
  8. pour the batter into the cooled down pound cake crust
  9. bake to 350F for 50 minutes to 1 hour
  10. cool down the cheesecake completely before serving (best to put overnight in the fridge)
  11. top with your favorite toppings!
  12. enjoy!

pound cake

if you want a million dollar pound cake recipe, try this! it's so good! :P

ingredients:

  • 3 cups sugar
  • 1 pound butter (melted) about 4 sticks
  • 6 pcs eggs
  • 4 cups flour
  • 3/4 cup milk
  • 1 tsp vanilla extract

  1. combine the melted butter and sugar in a large bowl and mix well
  2. add the eggs one by one and keep mixing
  3. add a cup of flour then add some milk and combine
  4. repeat the process of number 3 until you use all the remaining flour and milk
  5. add the vanilla and keep mixing until well combined
  6. bake to 300F for 1 hour and 40 minutes
  7. and you're done!

i hope you will enjoy this recipe! eat it alone, or you can use the cake as a cheesecake crust instead of graham crackers (which i will show you in my next video), or you can use the cake when you make tiramisu! there is so much you use the pound cake is for! :)

biscoff cookie butter cheesecake recipe

in this episode, let's make a biscoff cookie butter cheesecake! i have biscoff cookie butter that has been hiding in my pantry for quite a while, and i decided to do something with it before it expires. so i thought, maybe a cheesecake would be good, and the outcome? well, it's for you to figure out when you try to make this recipe. one thing for sure, husband and friends loved it! :) GOOD LUCK!

INGREDIENTS:

  • 2 cups graham crackers crumbs
  • 6 tablespoon melted butter
  • 1 block cream cheese (250 grams)
  • 1 cup sugar
  • 1 cup biscoff cookie butter
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

DIRECTIONS:

  1. into a bowl, combine graham cracker crumbs and melted butter and combine well
  2. pour the graham mixture into a prepared pan and pressed down firmly then bake to 350F for 8 to 10 minutes, make sure to cool down completely
  3. meanwhile, add cream cheese and sugar into a bowl and combine well
  4. then add the biscoff cookie butter and mix well
  5. add salt. mix well
  6. add the vanilla extract, egg and sour cream and mix well
  7. pour the mixture into a completely cooled down graham crumbs and bake to 350F for 30 - 40 minutes
  8. take the cake out of the oven and let it cool down
  9. the middle of the cake would be a little runny but that is completely natural
  10. ENJOY!

ingredients:

for the dough

  • 3/4 cup warm milk
  • 1 1/2 tsp yeast
  • 2 1/2 cups flour
  • 1/4 cup sugar
  • 1 egg
  • 4 tbsp butter
  • 1/2 tsp salt
  • oil for frying

 

bare custard doughnuts

for the custard filling

  • 2 tbsp custard powder (you can find at your nearest asian store)
  • 2 cups milk

directions:

  1. pour the yeast into the warm milk and mix together then set aside. let the yeast rise for about 5 minutes or so
  2. in a separate bowl, combine the flour and sugar
  3. then make a hole in the middle of the flour mixture, add the egg, butter and the yeast mixture and combine
  4. add the salt and start kneading the dough until soft
  5. for them dough into a ball, and place in a bowl. cover with plastic wrap and let the dough rise for about an hour or so or until doubled in size
  6. meanwhile, prepare the custard filling
  7. add 3 tbsp milk into a jar and then add the custard powder and mix. set aside
  8. warm the remaining milk and once the milk starts boiling, add the custard milk mixture into the boiling milk and mix well until it forms into smooth and condensed
  9. once the dough is ready, flatten the dough and cut into portions, i used my cocktail shaker lid to cut the dough, it works well
  10. let the dough rise again while you are heating up the pan with an oil on medium low heat
  11. once hot enough, (but not TOO hot or the dough will burn) start frying until golden brown, then flip and fry the other side
  12. poke a hole into the doughnuts and fill with custard filling
  13. do the same with the rest of the remaining doughnuts
  14. enjoy!

ube cheese pandesal

hey guys, here is finally my ube cheese pandesal recipe. i grew up with eating this sweet filipino bread called pandesal, it is a little similar to a dinner rolls, however this bread is not serve during dinner, it usually serve at breakfast time. people will wake up early in the morning and rush into the bakery and buy this bread, we pair this bread with coffee! yup! :) but, people started creating a lot of different versions of pandesal. before i came here in the US, there was one bakery close to where i used to live and started making moringa pandesal, and i honestly became obsessed with that pandesal. recently i've seen people making ube cheese pandesal, i would probably not call this a pandesal, because the traditional pandesal doesn't have filling. but this ube pandesal, they actually put cheese filling in it. i find it very interesting so then i figured, why not be one of the cult? :P everyone i know love this bread. so i hope you all are going to love this, too!

ingredients:

  • 3/4 cup warm milk
  • 1 1/2 tsp yeast (1 packet)
  • 2 2/3 cups flour
  • 3 tbsp sugar
  • 2/3 tsp salt
  • 1 egg
  • 1 tsp ube flavor
  • 1/4 stick butter
  • some cheese

directions:

  1. pre-heat the oven to 350F
  2. in a bowl, combine warm milk, yeast and mix together. then, set aside. let it rise for about 5 to 8 minutes
  3. into a different bowl, combine the flour, sugar, and salt
  4. then create a hole in the middle of the flour mixture
  5. add the yeast mixture into the flour, followed by the egg, butter and ube flavor then start kneading
  6. keep kneading until the dough will become stretchy and smooth. you can use a stand mixer if you have one. it will be a lot easier
  7. form the dough into a bowl and let the dough rise until doubled in size. for about an hour or so
  8. once the dough has doubled it's size. divide the dough into small portions. i was able to make a total of 8 pcs
  9. flatten the dough using a rolling pin, then scoop a teaspoon of cheese into the middle and secure very well to prevent the cheese from bursting. like what happened to mine
  10. do the same to the rest of the remaining dough.
  11. once done. let the bread rise again for another 15 minutes
  12. after 15 minutes, sprinkle the top of the bread with bread crumbs
  13. bake for 18 to 20 minutes
  14. and it's ready to serve!

banana cake

hey guys!

i know i already have a recipe for banana cake, but i thought i would make a new version that is still delicious, moist and everyone would like! :P the key to have a delicious banana cake, you have to pick the ripest banana that is available, the good ones are the ones that has dark spots on the banana skin. below and the list of the ingredients you need.

ingredients:

  • 3 super ripe bananas
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 1/2 cups sugar
  • 1 3/4 cups flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract

directions:

  1. pre-heat th oven to 350F
  2. in a bowl, smash all the bananas, if you want to have some chunks on your bite, leave some banana chunks. but if you want a nice flawless bite, make sure you smash it good!!
  3. then, add the eggs. mix all together
  4. add the milk and the vegetable oil then whisk all together
  5. add the sugar and whisk again.
  6. add the flour and baking soda and combine well
  7. add the vanilla extract and combine again. this time, you want to mix the batter longer. a good 5 minutes is good, but if you can do 10 minutes is even better
  8. line the side of the baking pan with parchment paper
  9. pour the banana batter into the baking pan
  10. bake for 30 minutes (make sure you insert a toothpick in the middle of the cake, if the toothpick you inserted comes out clean, then it's done)
  11. please cool down the cake completely before serving
  12. enjoy
