today, i will make a carrot cake! this recipe actually i got from the joy of cooking! i didn't expect how sweet this cake is, until i made it. good thing my husband has a sweet tooth, so he ate the whole cake! :D

ingredients:

  • 1 cup flour (sifted)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2/3 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups grated carrots

directions:

  1. pre heat the oven to 325F
  2. into a bowl. add the flour, baking soda,baking powder,cinnamon and combine
  3. in a separate bowl, add the vegetable oil, the sugar and egg. mix all together until thickened
  4. add the flour mixture and the egg mixture together and mix well
  5. lastly, add the grated carrots and combine well
  6. brush the baking pan with oil
  7. dust with flour
  8. pour the batter into the dusted prepared pan
  9. bake for 30 minutes or until the toothpick inserted into the cake comes out clean
  10. cool down the cake before cutting

chiffon cake

hey guys!

in this episode, i will show you how to make a chiffon cake / chiffon oil cake. enjoy!

ingredients:

  • 2 1/2 cups cake flour (sifted 2 times)
  • 1 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 8 egg whites
  • 1/2 cups vegetable oil
  • 5 egg yolks
  • 3/4 cup orange soda (you can use water too)
  • 1 teaspoon vanilla extract

directions:

  1. pre heat the oven to 325F
  2. beat the egg whites until stiff. you know if the egg whites is good when you flip the bowl upside down and the meringue wont fall. set aside
  3. combine vegetable oil, egg yolks, orange soda and vanilla extract into a separate bowl
  4. combine the cake flour, salt and baking powder
  5. then, add the flour into an oil and egg mixture, fold gently
  6. add the egg whites mixture and mix gently until well combine
  7. bake the cake in ungreased tube pan, or angel food cake pan to 30 to 40 minutes or until the middle of the cake is no longer jiggly
  8. let the cake cool completely before serving
  9. enjoy!

pineapple buns

here i'm going to show you how to make a pineapple buns! this is NOT the same as the bolo bao! we will use a pineapple jam as the filling. so if you want to learn, please keep reading! :)

ingredients:

  • 3 cups all purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 2 1/2 teaspoon instant dry yeast
  • 1 cup hot water
  • 1 egg
  • 4 tablespoons vegetable oil
  • 1 egg (for egg wash)

 

pineapple buns

directions:

  1. combine flour, sugar and salt into a bowl
  2. add the instant dry yeast. mix
  3. then add the hot water, eggs and vegetable oil. combine
  4. then start kneading your dough. you can use a stand mixer if you prefer
  5. let the dough rise for 1 hour or until doubled in size
  6. after the dough has risen. divide the dough into equal pieces.
  7. flatten the dough using a rolling pin
  8. scoop a tablespoon of pineapple jam into the middle of the flattened dough
  9. then seal tightly (do the same to the remaining dough)
  10. line a parchment paper into a baking dish
  11. move the bread into the baking dish
  12. brush the top of the bread with egg wash
  13. and bake the bread to 350F for 10 to 20 minutes
  14. and enjoy!

p.s you can sprinkle the top with powdered sugar! it wont make any difference but it looks pretty! :P

chocolate banana bread

this recipe is a little different than most of the banana chocolate bread out there. or i could be wrong but i used some nutella, a cocoa powder and brown sugar as a replacement of a granulated sugar. i wanted it to be delicious but not too sweet. so let's start!

ingredients:

  • 2 pieces super ripe bananas (you want your banana to have a dark spots in it-- that is super ripe)
  • 1 egg
  • 2 tablespoons vegetable oil
  • 3 tablespoons nutella
  • 1 cup cake flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon cocoa powder
  • 2 tablespoons brown sugar

directions:

  1. smash the banana with fork
  2. add the egg and vegetable oil then mix together
  3. add the nutella and mix
  4. add the cake flour, baking powder, baking soda, cocoa powder and brown sugar and mix well
  5. brush the baking pan with vegetable oil or butter
  6. pour the batter into the baking pan
  7. bake to 350F for 30 minutes or until the toothpick inserted into the bread comes out clean
  8. enjoy!

3 ingredients sponge cheesecake | Japanese sponge cheesecake

want to learn this 3 ingredient japanese sponge cheesecake? you are in the right page. this sponge cheesecake is super soft and taste like cotton candy but of course, it's a cheesecake! i know when my food is over the top delicious is when my husband would tell me it's delicious, not once, not twice, but 3 times! yup! i have the best critic! also, i replaced the white chocolate with candy melts, the result is the same. but, i highly recommend using white chocolates. i did this because i can't go out due to this virus that's going around. and with that, i hope everyone is staying safe!

so let's get into it. :)

 

japanese sponge cheesecake

ingredients:

  • 3 eggs
  • 1 block cheesecake
  • 120 grams white chocolate (in my case i used candy melts)

directions:

  1. separate the egg whites and egg yolks. cover the egg whites with plastic wrap and let it sit in the fridge until it's ready to use (it's easy to make a meringue when the egg whites are cold)
  2. break the white chocolates into pieces and melt in the microwave, 30 seconds in between. once the white chocolates are fully melted, add the cream cheese and combine well. set aside
  3. in a large bowl, whip the egg whites using an electric mixer until the egg whites gets thick enough
  4. add the egg yolk into a cream cheese batter. mix well
  5. add half of the meringue into the cream cheese batter and combine well, then add the rest of the meringue and mix well
  6. rub some butter or oil on parchment paper and line the round cake pan with a parchment paper
  7. pour the batter into the pan
  8. place the cake pan into a baking sheet, and add water
  9. bake n 340F for 15 minutes
  10. after 15 minutes, lower the temperature to 320F and bake again for another 15 minutes
  11. after 15 minutes turn the oven off and then let the cake sit in the oven for another 15 minutes
  12. after 15 minutes, remove the cake from the oven and let the cake cool completely before slicing
  13. then serve!

kimchi ramen

have you ever tried a kimchi ramen before? i guess it is not new in the market, but here's how i make mine..

 

ingredients:

  • 1 pack any ramen noodles
  • 1 egg
  • 1 stalk scallions chopped (for toppings)
  • 1 sausage
  • kimchi (as much as you like)
  • 1/4 of a whole onion (chopped)

directions:

  1. boil a water according to what the package of ramen of your choice instructed. usually, gourmet ramen like this, i add 3 cups of water
  2. once the water starts to boil, add the ramen noodles, sausage, onions, kimchi and stir. then add the egg, do not stir
  3. cover and cook for 4 minutes
  4. transfer to a bowl and top with scallions and serve

twisted doughtnuts

i got a lot of massive request about the twisted doughnuts i made the other day. well, can't blame everyone, it was super delicious! my husband who is counting his calorie intake ALL THE TIME even can't resist on these doughnuts. sent some to my friends and they loved it! i was thinking of filming a video about how to make these doughnuts but i guess i will do that some other time.

also, i was literally just playing around the ingredients, since baking take some time, hours of rising and such-- i came up of a way to make a dough that would only take a little time to rise. :)

list of ingredients:

  • 1 cup flour
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 tablespoon baking powder
  • 200 ml milk
  • 2 cups pancake mix
  • canola oil for frying

 

twisted doughnuts

 

directions:

  1. whisk eggs and milk together. set aside
  2. combine sugar, flour, baking powder
  3. create a well in the middle of the flour mixture, then add the egg mixture and mix
  4. transfer the dough mixture into a clean surface, and start kneading ( i suggest using a stand mixer if you have one because this dough is a little hard to work on, it needs patience )
  5. slowly start adding the pancake mix and keep kneading until no longer sticks on your hand
  6. transfer the dough into a clean surface
  7. cut the dough into small pieces, i was able to make 15 pieces
  8. roll a dough into a rope and twist (if the dough is sticky, add more flour in the surface area. or in my case, i kept adding oil into my palm while working on a dough)
  9. transfer all the twisted dough into a baking pan and let it sit for 20 minutes
  10. heat cooking oil in a large pan over low
  11. drop the twisted dough into the frying pan and fry until golden brown (this needs your attention, you do not want your doughnuts to burn)
  12. move the doughnuts from the frying pan and drain on the paper towel
  13. coat the doughnuts with sugar
  14. and serve!

cassava cake

hey guys! today's recipe is one of my favorite growing up. this type of crop called cassava literally grows everywhere in my town. you can make tons of recipe out of this crop. but right now, cassava cake it is.. so let's dive into the ingredients!

ingredients:

  • 2 packs of grated cassava (thawed if frozen)
  • 1 1/2 can of condensed milk
  • 1 can of coconut milk
  • 3 eggs
  • 1/2 cup granulated sugar
  • pinch of salt
  • cheese (optional)

for the toppings:

  • 1/2 can of condensed milk
  • 1/3 cup milk
  • 2 eggs
  • pinch of salt
  • melted butter (for brushing)

 

directions:

  1. Pre-heat the oven for 350f
  2. add all the ingredients into a bowl
  3. grease the baking pan
  4. add the mixture into the greased pan
  5. bake for 1 hour or until the batter is settled.
  6. meanwhile, combine all the ingredients for toppings
  7. after 1 hour, take the cassava cake out from the oven
  8. pour the toppings over the cassava cake
  9. bake again for 30 minutes
  10. after 30 minutes, take the cassava cake out from the oven
  11. top with cheese
  12. bake again for 10 minutes
  13. and SERVE!

japanese cheesecake using a rice cooker

hey riders!

how's everyone doing? this recipe that i'm going to share with you is one of my favorite food of all time. it's a japanese cheesecake! i've made this recipe a million times already, and not only the ingredients are so simple, it is also not difficult to make, and you read that right, we are using a rice cooker! :D so let's dive in!

ingredients:

  • 1 block cream cheese
  • 2 eggs (separate the egg whites and yolks)
  • 3/4 cups pancake mix
  • 3/4 cups whipping cream
  • 1/4 cup granulated sugar
  • melted butter (for brushing)
  • powdered sugar

directions:

  1. combine pancake mix, cream cheese, and egg yolk, whisk using a hand mixer until fully combined.
  2. add heavy cream in two parts, whisking well in between.
  3. in a separate bowl, whisk egg whites until firm peaks form, then add granulated sugar in three parts, whisking well in between.cheesecake

     

  4. slowly fold egg whites into pancake mixture in three parts and stir until fully incorporated.
  5. grease rice cooker bowl with melted butter and add cheese cake mixture. Cook for 70 minutes.
  6. once cooked turn the cake onto a plate, sprinkle with powder sugar.
  7. DONE!

tomato bread

who would think a tomato could turn into a delicious bread? i mean, liquid and flour equals bread, right? so maybe it's not a surprise! but i will show you how to make this delicious, soft, fluffy and healthier version of bread! although, the dough is a little hard to work on, but with a little patience, you will end up a bread that is heavenly sent. :)

ingredients:

  • hot water
  • 2 pieces tomatoes
  • 2 eggs (plus 1 extra for brushing)
  • 3 cups all purpose flour (1 cup for extra )
  • 3 tablespoon granulated sugar
  • 2 teaspoon instant dry yeast
  • breadcrumbs

directions:

  1. place tomatoes into a bowl
  2. pour a hot water into the tomatoes, leave for 3 minutes and then flip over (this is to make sure there's no dirt that's left in the tomatoes).
  3. place the clean tomatoes into the chopping board
  4. start slicing them (this is to make it easier to blend
  5. place the sliced tomatoes and eggs into the blender and blend
  6. pour the tomatoes and egg mixture into a bowl. set aside.
  7. add flour, sugar and yeast into the mixing bowl and mix.
  8. add the tomato and egg mixture into the flour mixture and combine until incorporated
  9. you will eventually need to move the dough into the clean surface and start kneading until you formed a nice and soft dough. it should be good when its no longer sticks to your hand. keep adding a flour if the dough is sticky.
  10. cover the dough and let it rise until doubled in size. about 1 hour.
  11. divide the dough into small sizes. you can weigh the dough if you want to get an even amount. otherwise, it doesn't really matter
  12. place the dough into an oiled baking dish and let it rise again for another 30 minutes.
  13. meanwhile, pre-heat the oven to 350F
  14. bake for 18 to 20 minutes.
  15. and enjoy!

enjoy the buns with peanut butter, jelly or eat it plain. yummy with coffee too. :)
