MONAY BREAD RECIPE
if you are not a fan of dense, milky and delicious bread, then this is not for you! the best thing about this bread is it's not too sweet, and you can pair this with coffee no problem! so if you want to give it a try, enjoy the recipe written below!
ingredients:
- 4 cups bread flour
- 1 1/4 cups lukewarm milk (about 110f to 115F)
- 1/2 cup sugar
- 2 egg yolks (room temperature) make sure the eggs are not cold from the refrigerator)
- 2 tablespoon butter (room temperature NOT melted)
- 1/2 cup milk powder
- 1 1/2 teaspoon salt
- 2 1/2 teaspoon active dry yeast
- 1 egg for egg wash
directions:
- warm up the milk into the microwave, make sure the temperature is about 110-115F, too hot may kill the yeast, add 1 tablespoon sugar into the milk followed with the yeast. stir and set aside. let the yeast rise for about 8 to 10 minutes
- into the mixing bowl, add all dry ingredients (flour, sugar, salt, powdered milk) combine and set aside until ready to use
- once the yeast is ready, pour the yeast into the bowl of flour, add the egg yolk and start kneading. you can knead the dough by hand, but it will take a while, i strongly suggest using a stand mixer
- halfway through kneading, add the butter and continue kneading the dough, the kneading will take approximately 12 to 15 minutes. dough should be smooth and not sticky
- shape the dough into a ball, and place in a bowl then cover with bread cloth or plastic wrap. let the dough rise until doubled in size, about 1.5 to 2 hours
- once the is ready, deflate the dough to get rid of the air bubbles
- divide the dough into total of 16 small pieces
- roll and shape each dough into a small ball
- place the bread into the baking pan lined with parchment paper
- make a cut to each dough balls halfway, but not all the way through
- cover the bread with bread towel or plastic wrap and let the bread rise for another 30 minutes
- after 30 minutes, brush the bread with egg wash
- then bake the bread to 350F pre heated oven for 17 to 20 minutes
