ingredients:

  • 3 cups all purpose flour
  • 1/4 tsp salt
  • 4 tbsp granulated sugar
  • 2 eggs
  • 4 tbsp softened butter + 4 tbsp for filling
  • 2/3 cup warm milk (110f - 115) too warm will kill the yeast
  • 3 tsp active dry yeast
  • 1 jar biscoff cookie butter

directions:

  1. into a mixing bowl, combine flour, salt and sugar
  2. add the eggs, butter, milk and yeast. combine
  3. start kneading the dough, you can knead the dough by hand or using a stand mixer. knead until the dough is smooth
  4. cover the dough with plastic wrap and let the dough rest for 1 to 2 hours or until doubled in size
  5. deflate the dough and move into a floured surface 
  6. flatten the dough about 1/4 inch thick (flatten into a rectangular shape as possible
  7. spread softened butter all over the flattened dough, use all 4 tbsp
  8. then, spread the whole jar of biscoff cookie butter over the flattened dough
  9. roll the dough into a log and divide into 12 pcs
  10. move the dough into an oiled baking pan
  11. cover and let the dough rise for another 30 minutes
  12. then bake into 350F pre heated oven for 20 minutes
  13. once the bread is baked. brush the top with melted butter
  14. and enjoy!

EASSIEST BREAD LOAF

 

i will never buy a bread loaf from the store ever again! :P this bread loaf is super soft, fluffy and a little sweet that will reminds you of a hawaiian bread.

ingredients:

  • 4 cups all purpose flour 
  • 1/2 cup sugar
  • 3 tsp active dry yeast
  • 1 1/4 cups lukewarm milk (about 110F to 115F)
  • 1 room temperature egg
  • 4 tbsp softened butter
  • 1 tsp salt

directions:

  1. add all the ingredients into a bowl, and combine
  2. then start kneading the dough. you can use hand to knead the dough or a stand mixer. although this dough is hand-knead friendly, i highly recommend using a stand mixer, the dough starts off super sticky. 
  3. keep kneading the dough until smooth and soft
  4. shape the dough into a ball and brush the dough with oil, or transfer the dough into an oiled bowl. cover and let the dough rise for at least 1 hour or until doubled in size (it took me 1 hour to rise the dough)
  5. deflate the dough and roll into a log
  6. divide the dough into 4 equal part
  7. flatten each dough, then roll again into a log. 
  8. flatten one more time then roll again into a log. set aside
  9. do the same to the remaining dough
  10. move the rolled bread dough into an oiled brushed baking loaf pan
  11. cover and let the bread dough rest for another 30 to 40 minutes (depending on the temperature of your house, time may vary. it took me 35 minutes to see the dough risen)
  12. brush the bread dough with egg wash
  13. bake into 350F pre heated oven for 25 minutes or until the top of the bread turns golden brown or when you tap the top of the bread and it sounds hollow. then the bread is done
  14. let the bread rest in a cooling rack and serve!

Garlic Cheese Bread

 

GARLIC CHEESE BREAD 

if you have never tried a garlic cheese bread before, then this is your chance to give it a go. it's cheesy, garlicky and super soft bread dough all combine together. 

ingredients:

  • 1 egg
  • 2 tbsp sugar
  • t tsp instant yeast
  • 1 1/2 cup flour + more for dusting
  • 1/3 cup warm milk (about 115F)
  • 1 tsp salt
  • 3 tbsp softened butter + 2 tbsp for toppings
  • 2 cloves minced garlic
  • 1/4 cup grated monterey jack cheese 
  • 1/4 cup grated cheddar cheese

directions:

  1. add egg into the bowl and whisk
  2. add the sugar and yeast and stir
  3. add flour and combine
  4. stir in warm milk 
  5. add the salt and mix
  6. move the dough into a flour area and begin kneading 
  7. add the butter and continue kneading until the dough comes together and smooth
  8. shape the dough into a ball and place in a warm area. let the dough rise until doubled in size. it took me about and hour and a half
  9. while the dough is resting. prepare the butter and minced garlic. mix together and set aside
  10. when the dough is ready, flattened the dough and brush with butter on top
  11. sprinkle the cheese on top 
  12. bake the bread into 350F pre heated oven for 15 minutes 
  13. and enjoy!

some helpful tips for this recipe:

  • if the dough is too sticky, you may add more flour a tablespoon at a time ( but too much flour can ruin the smoothness of the dough) so please be very careful 
  • please make sure the butter is at room temperature
  • you can add design to your dough to make it look pretty :)
  • please make sure the milk is at the right temperature, you do not want to kill your yeast, it will cause of not rising the dough

ENSAYMADA is a filipino bread that is soft, sweet and cheesy. it is originally from spain but with the philippines being colonized with the spain for over 333 years this bread became one of the most famous delicacies or bread in the philippines. there are so many ways on how to make this bread. famous bakeries in the philippines has their own ways of making the ensaymadas, and this is my own version.

ingredients:

    for the dough:

  • 3/4 cup (luke warm milk) about 110-115F
  • 1 tsp sugar (for use for proofing the yeast)
  • 2 1/2 tsp instant dry yeast
  • 3 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 1/2 tsp salt (i'm using himalayan salt, but regular salt is great, too)
  • 3 egg yolks
  • 1/2 cup softened butter (or 1 stick)

    for the topping:

  • 1/2 cup softened butter (or1 stick)
  • 1 cup powdered sugar
  • grated cheese ( i used the kraft eden cheese for this recipe, you can find them at your nearest filipino grocery store, otherwise american cheese will work too. but if you like a stronger cheese flavor, mild cheddar is good too)

directions:

  1. warm the milk  around 110 to 115F, if the milk is too hot you will kill your yeast. so please careful
  2. add sugar into the warm milk and stir
  3. add the yeast into the milk and stir. set aside. let the yeast rest until it bubbles and rise
  4. into a mixing bowl, add the flour, sugar, salt and combine
  5. pour the flour mixture into the stand mixer
  6. add the yeast mixture (making sure the yeast has risen before doing this)
  7. add the egg yolks then start kneading
  8. when the mixtures becomes a little crumbly, add the butter and continue kneading until the dough becomes soft
  9. transfer the dough into a bowl and cover with plastic wrap and let the dough rise for 2 to 3 hours or until doubled in size
  10. once the dough is ready move into a clean surface and deflate the dough
  11. shape the dough into a ball and divide the dough into 12 pieces
  12. flatten the dough and brush with softened butter
  13. roll the dough into a log (rolling side ways to create a longer log)
  14. then roll into a spiral shape tucked the end under
  15. move the bread into a baking pan lined with parchment paper
  16. cover the bread with plastic wrap and let the bread rest for another 30 to 45 minutes
  17. bake to pre heated oven 325F for 22 to 25 minutes
  18. while the bread is baking prepare the topping (combine the powdered sugar and softened butter)
  19. once the bread it out from the oven, let it cool down completely before adding the topping
  20. top with grated cheese
  21. and enjoy!

  • 3/4 cup warm milk (110f-115f)

  • 3 tsp active dry yeast
  • 3 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 1 tsp salt
  • 3 eggs
  • 10 tbsp butter (softened)
  • 120 grams dark chocolate
  • 8 tbsp butter (softened)
  • 1/2 cup powdered sugar
  • 1/4 cup sifted flour
  • 1/2 cup sugar(for making syrup)
  • 1/4 cup water (for making syrup)

directions:

  1. into a mixing bowl, add warm milk and sugar together. stir
  2. add the yeast stir and let the yeast rise for 8 to 11 minutes
  3. into a different bowl, combine the dry ingredients, {flour, salt, sugar}. combine and move into a stand mixer
  4. add the eggs
  5. once the yeast is ready, add in into the stand mixer with the dry ingredients and eggs. start kneading until combine
  6. scrape the sides when you need to, this will be a little sticky and that's okay
  7. add the butter and continue kneading the dough
  8. move the dough into a floured surface {dough should be a little sticky}
  9. continue kneading and add flour a tbsp at a time
  10. move into an oiled bowl, cover with damp towel and let the dough rise for at least 2 hours or until doubled in size
  11. while the dough is rising prepare the filling. add the chocolate into  a microwavable bowl, and microwave the chocolate on high stirring every 30 seconds and melted and blended
  12. add the softened butter, the sugar and sifted flour and combine. set aside
  13. when the dough is ready, deflate the dough and move the dough into a floured area
  14. cut the dough into half, then flattened the dough into a rectangular shape
  15. spread the chocolate filling leaving an inch space around the edges
  16. then roll the dough into a log, press each sides towards the center to shorten the log a little
  17. using a sharp knife or a scissors, cut the log into half lengthwise
  18. pinch both ends of the log together and start placing log over the other to create a braided dough
  19. spray the loaf baking pan with an oil, spread some flour
  20. move the braided dough into the baking pan
  21. cover the dough and let it rest for another 30 to 40 minutes
  22. bake to 375f for 25 to 30 minutes or until the toothpick inserted comes out clean
  23. while the dough is in the oven
  24. to make the syrup, simply combine hot water and the sugar. stir
  25. after the bread is done, brush with the syrup while its hot
  26. and enjoy!

ube spanish bread

 

ube flavor has becomes huge part of the filipino baking culture, i have made spanish bread of course, but today we will add a twist to it, let's make an ube spanish bread. :) things to note, make sure you use ube flavor and not ube extract.

for the dough

  • 1 cup lukewarm milk (about 110-115f)
  • 1 tbsp granulated sugar
  • 2 1/2 tsp instant dry yeast
  • 3 cups all purpose flour (more for dusting)
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 1/4 cup melted butter
  • 1 egg
  • 1 tsp ube flavor (make sure it is ube FLAVOR and not ube EXTRACT, they are two completely different)
  • bread crumbs

for the filling

  • 4 tbsp butter
  • 4 pcs crushed graham crackers
  • 1/4 cup milk
  • 1/4 cup flour
  • 1/2 cup sugar

directions:

  1. into your lukewarm milk, add 1 tbsp sugar and stir
  2. then add the yeast and stir. set aside. let the yeast rise for at least 8 to 11 minutes
  3. into a mixing bowl, combine flour, sugar and salt
  4. add the melted butter, the yeast mixture (make sure the yeast has risen), the egg and mix all together
  5. add 1 tsp ube flavor and continue kneading the dough until smooth. if the dough is sticky add flour a tbsp at a time, if the dough is hard add water a tbsp at a time
  6. shape the dough into a ball. place in an oiled bowl
  7. cover with plastic wrap and let the dough rise for about 1.5 to 2 hours or until the dough doubled in size
  8. while the dough is rising, cook the filling
  9. heat the pan then add the butter
  10. add the graham crackers and the milk and stir
  11. add the flour and sugar and continue mixing until it turns into pasty consistency
  12. turn the heat off and let the filling rest
  13. once the dough is ready, deflate the dough and move into a floured surface
  14. divide the dough into 4 equal portions
  15. roll the dough into a log and cut into equal parts, i was able to make 16 pcs, you can make the bread larger size if you want to
  16. flatten the dough and then spread filling in the middle leaving spaces on the sides
  17. roll the dough and repeat the process until you finish
  18. roll the bread into a plate of bread crumbs
  19. place the bread into a lined parchment paper baking pan
  20. cover the bread and let the bread rest for another 30 minutes
  21. set the oven temperature to 350f
  22. and bake the bread for 18 to 20 minutes
  23. and enjoy!

brioche and cookie dough in one yummy bread? this is what we are going to make today. the first time i've tried this bread was when i had a stop over in narita airport in japan. since then, i started looking the recipes online so i can make it on my own. quite few things to note is that, if you don't mix enough your dough, there will be a tendency the bread would be really dense, and that's not how it's supposed to be, so be very careful playing with the dough. :)

there are so many recipes you can find online, but i would really appreciate if you try mine. :)

ingredients:

for the cookie dough

  • 1/2 cup softened butter
  • 3/4 cup powdered sugar
  • 1 large egg
  • 1 tsp baking powder
  • 2 1/2 cup all purpose flour
  • 1 tsp vanilla extract

for the bread dough

  • 1 cup warm milk (110-115F)
  • 1 tbsp sugar (for the milk mixture)
  • 2 tsp instant dry yeast
  • 3 cups all purpose flour
  • 1/4 cup sugar
  • 1/2 cup softened butter
  • 1 tsp salt
  • 1 large egg
  • powdered sugar to sprinkle the top

  1. first, mix the cookie dough. add the softened butter into the bowl and cream until smooth
  2. add the powdered sugar and combine
  3. add the egg and mix
  4. add the baking powder, mix

  7. move the cookie dough into the plastic wrap, wrap the cookie dough and refrigerate
  8. for the bread dough. add the warm milk into a bowl, add the sugar and yeast and stir, let the yeast rise for at least 8 to 11 minutes
  9. into a different mixing bowl, add the flour, sugar, softened butter, salt, egg and the yeast mixture and combine
  10. move the dough into a clean area and begin kneading the dough until smooth
  11. shape the dough into a ball and move into an oiled mixing bowl
  12. then let the dough rise until doubled in size, depending on the humidity, it could take up to 1.5 to 2 hours until the dough is ready
  13. once the dough is ready, deflate the dough and move into a clean area
  14. shape into a ball and divide the dough into 12 pieces
  15. shape the dough into a ball and cover again to let it rise for another 20 minutes
  16. meanwhile, take your cookie dough out of the fridge, and divide the cookie dough into 12 pieces
  17. flatten the cookie dough into a round shape
  18. at this point your bread dough should be ready
  19. take the bread dough, and place the round shape flattened cookie dough on top of the bread dough
  20. press the bottom carefully to seal
  21. then gently score the dough into a crisscross pattern
  22. once done, cover the bread and let the bread rest for another 20 minutes
  23. set the oven temperature to 350F
  24. bake the bread for 20 to 22 minutes rotating halfway through
  25. and you are done!

siopao | steamed bun

it's friday! that means new video is up!

this video recipe is requested by a good friend of mine, zwinglai! if you google "siopao" you can find a million of recipes online, i've tried quite a few times making siopao but it does not taste the same as to how it taste like the siopao i remember. i began to feel like they are hiding the "secret" ingredient. i also tried making changes such us adding some vanilla extract, or using bread flour instead of all purpose, using a butter instead of vegetable oil but the result is still not the same. so i gave up!

but when my friend requested the recipe, i thought i should give it a go. so, i tried playing around with the ingredients, and with just one attempt, i finally was able to make it perfect! so, i am going to reveal some ingredients that i used with you guys!

siopao means "hot buns" it is similar to the cantonese steamed bun called cha siu bao. i'm pretty sure most countries has different versions of siopao. we don't bake siopao, we steam it. there is also a sauce for siopao, however, i decided to make the filling more saucy so we can go ahead and forget about the sauce. as a mom, my time is super limited. :)

you can absolutely use any fillings you prefer! my personal favorite is adobo (here is the link for my adobo recipe.) but i will show you the fillings i used in this recipe.

i suggest you follow my recipe without substitutions. if you substitute any of them, i am not sure how it will turn out. so, below are some of the quick tips i can give you to make the siopao.

  1. flour- wheat flour is the key! you can check your asian grocery store and find the korean brand of wheat flour. it is the same flour you use to make dumplings, or ramen noodles
  2. pork lard- ditch the vegetable oil or butter. go to your nearest mexican grocery store and grab some pork lard. this will help change the consistency of the dough
  3. milk- instead of water, use milk. just do it. :)

ingredients:

  • 2 cups lukewarm milk (about 115f to 120)
  • 1 tbsp granulated sugar (for yeast mixture)
  • 2 1/2 tsp active dry yeast
  • 5 cups wheat flour (more for dusting)
  • 1/2 cup granulated sugar (for flour mixture)
  • 1 1/2 tbsp baking powder
  • 1/3 cup pork lard

for the filling:

  • 1 tbsp vegetable oil
  • 1/2 chopped onions
  • 1 tbsp chopped garlic
  • 1 cup cooked shredded chicken
  • 1 tbsp vinegar
  • 1 tbsp soy sauce
  • 2 tbsp oyster sauce
  • salt and pepper to taste
  • 2 tbsp sweet chili sauce

directions:

  1. into a mixing bow, add the lukewarm milk, sugar and yeast. combine and set aside.
  2. into a different bowl, combine the flour, sugar, baking powder and mix
  3. then add the pork lard and combine
  4. move the dough into a clean surface and start kneading the dough until soft and smooth. if the dough is super sticky add more flour 1 tbsp at a time
  5. shape the dough into a ball and place the dough into an oiled bowl
  6. cover with plastic wrap and let the dough rise for 1 hour or so, or until doubled in size
  7. at this point we will make the filling
  8. into a hot skillet, add the vegetable oil
  9. then, saute the onion and garlic
  10. once the onion turns transparent you can add the chicken then mix
  11. add the vinegar, soy sauce and oyster sauce then combine
  12. add salt and pepper to taste (be careful adding the salt as we already added soy sauce to it
  13. then add the sweet chili sauce and continue to mix until thickened but not too dry
  14. move the filling into a bowl and let it cool down
  15. cut the dough into small portions, you will make 16 pieces of siopao for this recipe
  16. flatten the dough, then add the filling
  17. secure the dough nice and tight to make sure it wont open up while it's cooking
  18. lay the dough on top of a parchment paper
  19. and repeat the process until you finished
  20. add the siopao into the steamer
  21. steam for 15 minutes
  22. and enjoy!

this bread loaf is super simple to make, it requires basic ingredients and it's soft, delicious with a touch of sweetness. although it is a lot easier to just buy a white bread loaf at the grocery stores, it is also satisfying to just make on your own. not only you know the quality of ingredients you use, it also leaves a good smell on your whole house and it doesn't have preservatives.

  5. punch the dough and cut in half
  6. roll the dough into a log and cut, make about 8 pieces
  7. roll the dough into a ball and transfer into a prepared oiled baking dish
  8. cover the dough and let the dough rise for another 30 minutes
  9. pre heat the oven to 350F
  10. brush the dough with egg wash
  11. bake for 20 minutes
  12. and enjoy!

  2. to lessen your dough time rising, pre heat your oven to the lowest temperature, turn it off. cover your newly knead dough with a damp towel and put it inside the oven. usually with this process, my dough is ready in just 30 minutes

nutella is probably one of the ingredients i used quite often in my cooking blog. there's just so much delicious recipes you can make nutella with. if you remember a couple of months ago, i made a nutella brownies (check it here: https://youtu.be/g-YOAqaZb68  ) that all my friends and family love! and today, i decided to make a nutella bread. this one is probably one of my favorite bread that i have made, it is more like a pastry than a bread, it is flaky yet soft and just over all so good! so GOODLUCK!

ingredients:

  • 2 3/4 cup flour (all purpose)
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 stick butter (4 tablespoon)
  • 1 egg
  • 1 packet instant dry yeast
  • 3/4 cup warm milk (about 110F)
  • NUTELLA

directions:

  1. add 1 tbsp sugar, milk and yeast into a jar and mix, let the yeast mixture rise for about 8-10 minutes
  2. then in a different bowl, add all dry ingredients, flour, sugar and salt. combine
  3. once the yeast mixture has risen, combine the dry and wet ingredients (flour mixture and yeast mixture)
  4. then add the egg and the butter, then start kneading the dough until smooth
  5. shape the dough into a ball and cover with kitchen towel, let the dough rise until doubled in size. about 1 to 2 hours
  6. flatten the dough into a rectangle shape
  7. then spread the nutella all over the flattened dough leaving an inch around the edges
  8. roll the dough into a log
  9. slice the dough into long way leaving the top connected
  10. braid the dough by placing a piece of dough over the other
  11. pinch both ends to secure
  12. place the dough into a prepared baking pan and let the dough rest for another 30 minutes
  13. pre heat the over to 350F
  14. then bake the dough for 20 to 22 minutes or until the top of the bread turned golden brown
  15. dust with powdered sugar

sai's tip for baking a nutella bread:

  1. please make sure your milk is lukewarm, not hot! many times people asked me why their dough is not rising? well, maybe because your yeast is dead! :P so please make sure it is in the right temperature! :D
  2. i highly recommend using a stand mixer when kneading the dough, this dough needs to knead until it's smooth- the smoothest your dough, the better consistency you get for this recipe.
  3. if your nutella is hard to spread, microwave the nutella for 30 seconds
  4. enjoy! :)
