today, i will make a carrot cake! this recipe actually i got from the joy of cooking! i didn't expect how sweet this cake is, until i made it. good thing my husband has a sweet tooth, so he ate the whole cake! :D

ingredients:

  • 1 cup flour (sifted)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2/3 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups grated carrots

directions:

  1. pre heat the oven to 325F
  2. into a bowl. add the flour, baking soda,baking powder,cinnamon and combine
  3. in a separate bowl, add the vegetable oil, the sugar and egg. mix all together until thickened
  4. add the flour mixture and the egg mixture together and mix well
  5. lastly, add the grated carrots and combine well
  6. brush the baking pan with oil
  7. dust with flour
  8. pour the batter into the dusted prepared pan
  9. bake for 30 minutes or until the toothpick inserted into the cake comes out clean
  10. cool down the cake before cutting

chiffon cake

hey guys!

in this episode, i will show you how to make a chiffon cake / chiffon oil cake. enjoy!

ingredients:

  • 2 1/2 cups cake flour (sifted 2 times)
  • 1 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 8 egg whites
  • 1/2 cups vegetable oil
  • 5 egg yolks
  • 3/4 cup orange soda (you can use water too)
  • 1 teaspoon vanilla extract

directions:

  1. pre heat the oven to 325F
  2. beat the egg whites until stiff. you know if the egg whites is good when you flip the bowl upside down and the meringue wont fall. set aside
  3. combine vegetable oil, egg yolks, orange soda and vanilla extract into a separate bowl
  4. combine the cake flour, salt and baking powder
  5. then, add the flour into an oil and egg mixture, fold gently
  6. add the egg whites mixture and mix gently until well combine
  7. bake the cake in ungreased tube pan, or angel food cake pan to 30 to 40 minutes or until the middle of the cake is no longer jiggly
  8. let the cake cool completely before serving
  9. enjoy!

chocolate banana bread

this recipe is a little different than most of the banana chocolate bread out there. or i could be wrong but i used some nutella, a cocoa powder and brown sugar as a replacement of a granulated sugar. i wanted it to be delicious but not too sweet. so let's start!

ingredients:

  • 2 pieces super ripe bananas (you want your banana to have a dark spots in it-- that is super ripe)
  • 1 egg
  • 2 tablespoons vegetable oil
  • 3 tablespoons nutella
  • 1 cup cake flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon cocoa powder
  • 2 tablespoons brown sugar

directions:

  1. smash the banana with fork
  2. add the egg and vegetable oil then mix together
  3. add the nutella and mix
  4. add the cake flour, baking powder, baking soda, cocoa powder and brown sugar and mix well
  5. brush the baking pan with vegetable oil or butter
  6. pour the batter into the baking pan
  7. bake to 350F for 30 minutes or until the toothpick inserted into the bread comes out clean
  8. enjoy!

twisted doughtnuts

i got a lot of massive request about the twisted doughnuts i made the other day. well, can't blame everyone, it was super delicious! my husband who is counting his calorie intake ALL THE TIME even can't resist on these doughnuts. sent some to my friends and they loved it! i was thinking of filming a video about how to make these doughnuts but i guess i will do that some other time.

also, i was literally just playing around the ingredients, since baking take some time, hours of rising and such-- i came up of a way to make a dough that would only take a little time to rise. :)

list of ingredients:

  • 1 cup flour
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 tablespoon baking powder
  • 200 ml milk
  • 2 cups pancake mix
  • canola oil for frying

 

twisted doughnuts

 

directions:

  1. whisk eggs and milk together. set aside
  2. combine sugar, flour, baking powder
  3. create a well in the middle of the flour mixture, then add the egg mixture and mix
  4. transfer the dough mixture into a clean surface, and start kneading ( i suggest using a stand mixer if you have one because this dough is a little hard to work on, it needs patience )
  5. slowly start adding the pancake mix and keep kneading until no longer sticks on your hand
  6. transfer the dough into a clean surface
  7. cut the dough into small pieces, i was able to make 15 pieces
  8. roll a dough into a rope and twist (if the dough is sticky, add more flour in the surface area. or in my case, i kept adding oil into my palm while working on a dough)
  9. transfer all the twisted dough into a baking pan and let it sit for 20 minutes
  10. heat cooking oil in a large pan over low
  11. drop the twisted dough into the frying pan and fry until golden brown (this needs your attention, you do not want your doughnuts to burn)
  12. move the doughnuts from the frying pan and drain on the paper towel
  13. coat the doughnuts with sugar
  14. and serve!

have you riders heard of hotcakes? it is a filipino version of pancakes in the philippines! in so many places, pancakes are served for breakfast! but in the philippines, not only you see them at the breakfast table, but you can also serve it as a (morning and afternoon) snack (yes! filipinos love to snack-- but that's a different story)!

it is a popular street food in the philippines! not only because it is very inexpensive, but also because it is super easy to make. it's thin and fluffy and also has that egg yellow look in it. you can add food coloring, but to me it doesn't really matter as long as the taste is just as good as i can remember. it definitely was my favorite snack growing up.

if you have a sweet tooth, this is definitely for you! not only are hotcakes sweet, you also have to smother it with margarine or butter and sprinkle with lots of sugar before serving! yum!!

i've been making this recipe for a while now, so i decided why not share it with you riders, that way we can all enjoy the goodness of these hotcakes. :)

list of ingredients:

directions:

  1. in a bowl, combine all dry ingredients (flour, baking powder, salt, and sugar). set aside.
  2. in another bowl, combine all wet ingredients (milk, egg, and vegetable oil).
  3. add the wet and dry ingredients and mix together until well combined.
  4. heat the skillet to a medium low and lightly oil with cooking spray or butter.
  5. scoop some batter mix and add to the skillet
  6. you'll know when it's ready to flip if the center starts to bubble up. around 30 seconds each side.
  7. move the hot cakes from the skillet to the plate and spread some butter or margarine. sprinkle with sugar on top and it's ready to serve.
  8. best served while it's warm.

also, super good with coffee or orange juice!

fast and easy waffles

Hi guys!

If you are looking for an easy, fast and simple waffle recipe, this video is for you! I made a single serving of waffle just for myself. You can make a lot of different types of waffles, so many you can see online. But this one is different. I made it so simple yet you can make it super delicious afterwards by adding different toppings according to your liking.

Below are the lists of ingredients:

  • 1/2 cup milk
  • 1 egg
  • 1 tablespoon melted butter
  • 1/2 cup all purpose flour
  • 1 teaspoon baking powder
  • pinch of  salt

I am using a waffle maker that i found on amazon which is super cheap and makes really good waffle. It will tell you when the waffle is done. :)
