TOMATO AVOCADO SALAD

it's refreshing and nothing beats a recipe that is easy and fast to make. also, you can absolutely switch up the ingredients. if you have some vegetables that you need to use before it goes bad, go ahead and use them. 

this recipe is also amazing with feta cheese! it's everything you can imagine! and oh-- if you have chips, crush it on top of the salad and you are all set! :P

ingredients: 

for this recipe (1 serving)

  • 3 leaves lettuce 
  • 10 pieces cherry tomatoes
  • 1 avocado
  • 1 tsp avocado oil
  • 1 tsp balsamic vinegar
  • 1 tbsp saucy lips cilantro or you can chopped cilantro (optional)
  • add some fresh parsley 
  • cheese 

directions:

  1. make sure all the vegetables and washed. chop the lettuce and place in a mixing bowl
  2. cut the cherry tomatoes into halves and place into a mixing bowl
  3. slice the avocado and add into the mixing bowl
  4. add the avocado oil, balsamic vinegar, cilantro, parsley and cheese
  5. mix all together and served!

one pot meal in a rice cooker vegetarian meal

 

ONE POT MEAL

many people think that rice cooker can only be use for making a rice. rice cooker steam and boil rice so therefore, it can also make some other dishes. so, today, i am showing you one way i enjoy my dish using only the rice cooker. :)

ingredients : for this meal

  • 2 cups rice + water to soak the rice
  • 1/2 medium size carrots
  • 1 medium size potatoes
  • 1/4 of a whole onion
  • ginger | optional
  • 1/2 chayote
  • 1 tbsp mirin
  • 2 tbsp soy sauce
  • t tbsp rice vinegar
  • 1 tsp sesame oil
  • garlic powder
  • furikake seasoning
  • water
  • cilantro or scallions for toppings

you can absolutely replace all the ingredients with what you prefer except green leafy- although, you can add the green leafy vegetables as a topping. it will get mushy if you add them with the rest of the ingredients in the rice cooker.

instructions :

  1. soak the rice with water for 30 minutes 
  2. wash / clean the vegetables and cut them into small cubes
  3. disregard the water from the soaked rice
  4. add the rice into the rice cooker followed by the vegetables 
  5. add the seasoning
  6. place the rice cooker pot into the rice cooker base and cook just like how you cook your regular rice 
  7. enjoy!

husband was asking for chipotle the other day, I really don't want to spend my time going to the store and pick it up, or spending money for something that i know i can make at home, and probably better? 😉 i know when my food is amazing because husband would tell me how delicious the food was over and over. so GOOD LUCK!

ingredients:

  • 1 can corn
  • 1 can black beans
  • 1 can tomatoes (diced tomatoes with cilantro)
  • 1 block colby jack cheese (1 pound or more, if you want it to be super cheesy)
  • 1 can enchiladas sauce (if you don’t want to make the sauce from scratch)
  •  flour tortillas

 

enchiladas sauce:

  • 1 can tomato sauce (8oz)
  • 1 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1 knorr cube (vegetable)
  • 1 1/2 cups water
  • 1/4 cup sour cream
  • 2 tablespoons flour (dissolve this in the 1 1/2 cup water for easy mixing)
  • salt and pepper to taste

  1. pre heat the oven to 375F
  2. drain the canned tomatoes, black beans and corn. set aside
  3. make the enchaladas sauce, add all the ingredients into a pot, and mix slowly until thickens a little
  4. to layer: add the sauce first into a baking pan, then add the tortillas,the corn, black beans, diced tomatoes and cheese
  5. repeat the process until you use all the ingredients
  6. cover lightly with tin foil (do not tighten)
  7. bake for 45 to 50 minutes
  8. let the enchiladas rest for at least 5 to 10 minutes before serving
  9. top with your favorite enchiladas toppings. i add sour cream, chopped red onion, cilantro, chopped lettuce, salsa and crunch fritos
  10. enjoy!

ensalada filipino salad

it's grilling season, and what's good with a grilled pork belly, or grilled chicken barbeque to pair with?-- a yummy crispy cucumber salad. yum! you do not need any fancy ingredients for this. it is a mixture of sweet and sour and it's super refreshing! so good luck!

ingredients:

  • 1 large cucumber
  • 1 large roma tomatoes
  • 1/4 cup chopped onions
  • 1/2 cup chopped cilantro
  • 1/3 cup vinegar
  • 1/4 cup brown sugar
  • 1 teaspoon salt
  • chili (optional)

directions:

  1. please make sure all the vegetables are washed and clean
  2. cut the cucumber and tomatoes into small cubes, place into the mixing bowl
  3. add the chopped onion, cilantro, vinegar, sugar and salt then stir
  4. and serve with your favorite grilled meat
  5. enjoy!

sai's tip for this recipe:

  1. you can add olive oil or garlic powder for this recipe, it will be so good!
  2. if you think the mixture is too sweet, you might want to slowly add the sugar into the mixture to make sure it will meet your tastes
  3. if it's too sour, add more sugar until it levels up the sweetness and sourness
  4. try this salad with white rice on the side, it's super good too

shrimp coconut curry

i made a shrimp coconut curry and it was super yummy! i did not even add salt to the dish! :D in case you are interested, here is how i made it, super simple ingredients.

ingredients:

  • 3/4 ounce fresh ginger
  • 1 red onion
  • 3 cloves garlic or more depending on your preference
  • 1 1/2 tablespoon curry powder
  • 1/2 lime
  • 2 cans of coconut milk
  • 2 tablespoon vegetable oil
  • 1 pound shrimp
  • some green leafy vegetables (in my case, i use baby spinach, cilantro and green onions)
  • splash of fish sauce
  • salt and pepper to taste

directions:

  1. saute the onion, garlic and ginger into a heated pan with oil
  2. add the coconut milk, curry powder, and fish sauce
  3. let the sauce simmer for about 3-5 minutes
  4. add the shrimp and cook on a low heat. make sure to not overcook the shrimp
  5. add the leafy vegetables and salt and pepper according to your taste.
  6. enjoy with rice!

 

soba noodles

hey guys!

here, i'm sharing with you how i make my soba noodles. it's very simple to make and in less than 20 minutes, you can have a hearty meal ready on your dinner table! so good luck!

ingredients:

  • 1 tbsp vegetable oil (canola oil, olive oil works too)
  • 2 tbsp sesame oil
  • 3 pieces chili peppers (or crushed peppers works too)
  • 2 tbsp honey
  • 1-2 tbsp soy sauce (depending on your taste)
  • 1 bundle soba noodle
  • 1 stalk scallions
  • 1/2 cup cilantro
  • water

directions:

  1. in a heated pan, pour in the oil, sesame oil, honey, the chili peppers and combine. when it starts to bubbles, turn the heat off and set aside
  2. add water into a pot. please cook the soba noodles according to the packet instructions
  3. drain the soba noodles and run with cold water. then set aside
  4. chopped the scallions and cilantro into pieces
  5. pour the sauce into the soba noodles
  6. top with scallions and cilantro and mix together
  7. add 1 tbsp of soy sauce first and try. if you think you want to add more, then please do. it's your preference.
  8. serve!

enchiladas | vegetarian

hey riders,

in this episode of in for the ride, i will show you my own way of making enchiladas! believe it or not, i used to really not like mexican food, in fact before i got here in the US, i had never had enchiladas. since then, my love for mexican food has grown, and now it is one of my favorite foods!

when i think of enchiladas, i thought of the cheesy sauce smothered on top of the burrito- that's enchiladas! but i don't think that is really how traditionally it's done. this is just my own way-- so, if you are interested on how to make this recipe, please head over to my youtube channel for the easy guide.
