ingredients:

for the streusel

  • 4 tbsp butter (softened)
  • 1/4 tsp nutmeg
  • 1/4 cup brown sugar
  • 3 tbsp all purpose flour

for the batter

  • 3 ripe banana
  • 3 eggs
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 1/2 cup granulated sugar
  • 2 cups flour
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

  1. pre heat the oven to 350F (175c)
  2. prepare your baking pan, oiled the bottom of the pan, i suggest using a loaf pan otherwise any pan should work
  3. into a bowl, combine the butter, nutmeg, brown sugar and flour. mix together until crumbled. set aside
  4. into a different bowl, mashed the banana
  5. then add the eggs into the mashed banana and mix
  6. add the milk and mix
  7. add the vegetable oil and mix
  8. add the flour, baking powder, vanilla extract and sour cream and combine
  9. pour the batter into prepared pan.
  10. bake for 40 to 45 minutes or until the toothpick inserted into the bread comes out clean
  11. enjoy!

eggless basque burnt cheesecake

i'm probably a little late to this craze! this basque burnt cheesecake has been all over the internet since last year, and i've been meaning to make it. i saw a lot of recipes online and was shocked by how many eggs they used.  surprisingly, i couldn't find anyone who makes a basque burnt cheesecake without eggs. so, i decided to make one. the ingredients are pretty simple and instead of using a gazillion eggs, i replaced the eggs with sour cream and sweetened condensed milk.

if you are vegetarian or have a high cholesterol level, please try this recipe, and if you do end up liking it, don't forget to share!

the original famous burnt cheesecake was created at La Viña in san sebastian, spain and i can't wait to visit and try this famous burnt cheesecake!

the key to enjoy this cheesecake is to make sure you cool the cake down completely before consuming the cake, this cake is meant to be served at room temperature, so please don't put it in the fridge and also don't consume it while it's hot/warm. GOOD LUCK!

directions:

  1. preheat your oven to 400F (200C)
  2. spread butter all over the pan
  3. cut a sheet of parchment paper enough to line the inside of the pan leaving a couple of inches on top to make sure the batter wont overflow while baking
  4. flatten the sheets onto the pan. set aside
  5. in a mixing bowl, add the cream cheese and sugar and mix well
  6. continue to mix and add the sweetened condensed milk, sour cream, and vanilla extract
  7. add the cake flour and mix well for a minute or two
  8. pour the cream cheese batter into the prepared pan
  9. bake for 30 to 35 minutes or until the top and edges of the cheesecake are slightly burnt
  10. once done, please make sure you cool the cake to room temperature completely before consuming
  11. enjoy!

  • it is generally best if all ingredients are at room temperature when baking
  • 8" spring form round pan is what i used to make the cake 
  • i mentioned it already but make sure to cool the cake completely to room temperature before consuming!

husband said this recipe is one of his favorites~ i have baked a banana muffins, banana bread and banana cake, so i thought i should try banana cupcakes. i don't have much in my pantry but i have a banana that is going bad soon, and before that happens, i needed it to rescue. although, it didn't look as good as the muffins i have baked, it is so delicious and super moist! i also added a cream cheese frosting since that what i have on hand. :) so GOOD LUCK!

ingredients:

for the batter

  • 1/4 cup brown sugar
  • 1/2 cup granulated sugar (white sugar)
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 ripe bananas
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 6 tablespoon butter (room temperature)
  • 3/4 cup sour cream
  • 3/4 cup milk
  • 1/4 tsp salt

for the frostings

  • 1 block cream cheese (room temperature)
  • 1/2 cup butter 8 tbsp (room temperature)
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

directions:

  1. pre heat the oven to 350F
  2. in a mixing bowl, add the brown sugar, granulated sugar and eggs. beat until fluffy
  3. add the milk, butter, sour cream and vanilla extract. combine
  4. add the flour, baking powder, baking soda and salt. combine
  5. add the mashed banana into the batter and combine. please do not over mixed
  6. pour the batter into a cupcake baking pan, about 3/4 full
  7. bake to preheated oven fro 20-22 minutes
  8. let the cupcake cool down completely before adding the frosting

to make the frosting:

  1. add the butter and cream cheese into a mixing bowl. combine
  2. add the powdered sugar and vanilla extract and combine well

to frost the cupcake:

  • simply add the cream cheese frosting on top of the cupcake and enjoy~

some tips:

  1. make sure all the ingredients you are using such as eggs, cream cheese, butter is at room temperature, or else it wont be as easy to mix.
  2. make sure you smash the banana into really fine pieces, so it wont leave a chunky bites on your cupcakes
  3. it is also important that your banana is super ripe. banana flavor can be a replacement
  4. bake at no more than 22 minutes, it will be a little jiggly so wait for the cupcakes to cool down
  5. do not apply the frostings if the cupcakes are not completely cooled down, your frostings will melt

  • 1 can corn
  • 1 can black beans
  • 1 can tomatoes (diced tomatoes with cilantro)
  • 1 block colby jack cheese (1 pound or more, if you want it to be super cheesy)
  • 1 can enchiladas sauce (if you don’t want to make the sauce from scratch)
  •  flour tortillas

 

enchiladas sauce:

  • 1 can tomato sauce (8oz)
  • 1 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1 knorr cube (vegetable)
  • 1 1/2 cups water
  • 1/4 cup sour cream
  • 2 tablespoons flour (dissolve this in the 1 1/2 cup water for easy mixing)
  • salt and pepper to taste

  1. pre heat the oven to 375F
  2. drain the canned tomatoes, black beans and corn. set aside
  3. make the enchaladas sauce, add all the ingredients into a pot, and mix slowly until thickens a little
  4. to layer: add the sauce first into a baking pan, then add the tortillas,the corn, black beans, diced tomatoes and cheese
  5. repeat the process until you use all the ingredients
  6. cover lightly with tin foil (do not tighten)
  7. bake for 45 to 50 minutes
  8. let the enchiladas rest for at least 5 to 10 minutes before serving
  9. top with your favorite enchiladas toppings. i add sour cream, chopped red onion, cilantro, chopped lettuce, salsa and crunch fritos
  10. enjoy!

the other day, i was thinking about what to film for today's video recipe, then i remember my husband telling me about my mixed berry muffins recipe (click here: https://youtu.be/fqzlRTqzDsU  that he really really liked it a lot! so i decided to take the same ingredients and i adjusted the amount of sugar since i am adding oreos to it, i didn't want it to be real sweet. and husband approved it again! it wasn't as moist as the mixed berry muffins but he said he couldn't really say anything except it's super delicious! :) so GOODLUCK!

ingredients:

  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup sour cream
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 2 teaspoon baking powder
  • 2 cups all purpose flour
  • 1 1/2 cups crumbled oreo (about 12 pieces including the filling)

we usually don't eat breakfast but on weekends, we like to start our day with a freshly brewed coffee and some yummy perfect muffins! i have made a couple of muffins recipes such as banana muffins (click here: https://youtu.be/--TXIEL0HTE  ) and cream cheese muffins (click here: https://youtu.be/9r9MCEwLE04 ) both are so yummy and soft and delicious in their own way. 1 ingredient that i added on this recipe made a lot of difference compare to the other 2 muffins i've made. also, i am going to use a frozen berries in this recipe, no need to thaw! :)

you can make these muffins the night before, or in the morning, -- who doesn't want to wake up with a super yummy smell of a freshly baked goods? so, good luck! :)

hey riders!

i hope everyone is doing great! today, i will show you how to make the delicious crunch wrap supreme from taco bell. honestly, i have never had crunch wrap from taco bell, but one time we visited my sister in-law and they made it for us, and that's when i fell in love with the meal. so, we've been creating many different fillings, we used chicken, beef steak, ground beef and my friends picked beef steak over other ones. but! you can absolutely make crunch wrap vegetarian and that is what i am going to show you in today's recipe. ENJOY!

ingredients:

  • flour tortilla
  • cheese of your choice ( i used cheddar cheese)
  • lettuce
  • red cabbage
  • carrots
  • sour cream
  • salsa
  • salad dressing (optional)
  • fritos chips
  • butter or olive oil for frying

 

crunch wrap supreme

directions:

  1. have your ingredients ready
  2. prepare the salad first. make sure you washed all your vegetables. chop the vegetables and mix all together in a bowl
  3. layer all the ingredients, start with the cheese, followed with the salad, salsa, salad dressing (optional) and fritos
  4. fold the edge of the tortilla to the center of the fillings, fold tightly, but not so tight that the tortilla might tear
  5. spray the skillet with oil or butter
  6. place the crunch wrap supreme seam side down onto the skillet
  7. cook for 2 to 3 minutes or until golden brown
  8. flip over and cook the other side until golden brown
  9. best to eat immediately!

in this episode, let's make a biscoff cookie butter cheesecake! i have biscoff cookie butter that has been hiding in my pantry for quite a while, and i decided to do something with it before it expires. so i thought, maybe a cheesecake would be good, and the outcome? well, it's for you to figure out when you try to make this recipe. one thing for sure, husband and friends loved it! :) GOOD LUCK!

INGREDIENTS:

  • 2 cups graham crackers crumbs
  • 6 tablespoon melted butter
  • 1 block cream cheese (250 grams)
  • 1 cup sugar
  • 1 cup biscoff cookie butter
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

DIRECTIONS:

  1. into a bowl, combine graham cracker crumbs and melted butter and combine well
  2. pour the graham mixture into a prepared pan and pressed down firmly then bake to 350F for 8 to 10 minutes, make sure to cool down completely
  3. meanwhile, add cream cheese and sugar into a bowl and combine well
  4. then add the biscoff cookie butter and mix well
  5. add salt. mix well
  6. add the vanilla extract, egg and sour cream and mix well
  7. pour the mixture into a completely cooled down graham crumbs and bake to 350F for 30 - 40 minutes
  8. take the cake out of the oven and let it cool down
  9. the middle of the cake would be a little runny but that is completely natural
  10. ENJOY!

easy cheesy potatoes

hey riders!

i have a new video on youtube--how to make cheesy potatoes. i had never had cheesy potatoes when i came to the US; it was Thanksgiving the first time i discovered this delicious dish and loved it. my mom in-law gave me her ingredients for cheesy potatoes and i decided to play around with it. she makes really really delicious cheesy potatoes and i don't ever think i can top it.

so, here is my own version and i hope you guys will give it a try.

ingredients:

  • 30 oz bag hash browns
  • 1/4 cup chopped onions
  • 2 cups sour cream
  •  10.5 oz cream of chicken and mushrooms soup
  • 1/4 cup melted butter
  • 2 cups shredded cheddar cheese
  • 1 teaspoon onion salt
  • 1/2 cup corn flakes

directions:

  1. pre heat the oven to 350F
  2. in a bowl, combined all the ingredients (except the cornflakes and melted butter) mix well and spread evenly
  3. top with corn flakes
  4. pour the butter on top
  5. bake for 35 to 40 minutes
  6. and DONE!

in this episode of in for the ride, i will show you my own way of making enchiladas! believe it or not, i used to really not like mexican food, in fact before i got here in the US, i had never had enchiladas. since then, my love for mexican food has grown, and now it is one of my favorite foods!
