first, I crushed the chocolate wafer, i used the wafers as the base layer or crust, i didn't use butter because it was already sticky enough. although, i suggest adding 1/4 stick of melted butter to keep the crumbs together.

next the cream cheese mixture, i only added cream cheese, powdered sugar and cocoa. i wanted the mixture to be on the thicker side, so if you don't like it to be that thick, you can adjust the mixture by adding 1/2 cup of heavy whipping cream.

i then added some white chocolate chips that i melted with heavy whipping cream as the top layer. the cream cheese mixture is not that sweet, so adding the white chocolate would add a little more sweetness to the cake.

i then refrigerate the cake overnight. and the next morning, you can add any other toppings you like, this process is mostly really to decorate the cake, you don't have to do anything anymore. you can serve the cake as it is. but because I wanted for the cake to look a little presentable, I whipped a cup of whipping cream and covered the cake with it.

to get a little nice slice of the cake, you can emerge the knife into hot water first before cutting the cake.

the pan that i use for this cake is the 8" spring form pan.

ingredients:

  • 2 blocks cream cheese (16oz )
  • 1 cup powdered sugar
  • 1 tablespoon cocoa powder
  • 1 cup white chocolate chips
  • 1/4 cup heavy whipping cream
  • 12 pieces chocolate filled wafers
  • 1 cup heavy whipping cream (for covering the cake)
  • some toppings you prefer, chocolate chips, whipped cream, fresh strawberries and more! 

pan size : 8" spring form pan

you also gonna need a parchment paper

 

directions:

  1. prepare the pan
  2. place the wafers into a zip lock bag
  3. crush the wafers until turns into crumbs using a rolling pin
  4. then place the crumbs into the prepared pan
  5. press firmly into the bottom and slightly up the sides then refrigerate 
  6. into a mixing bowl, add the cream cheese (make sure it's at room temperature) then, beat the cream cheese using a hand mixer until smooth
  7. add the powdered sugar and continue beating until combine 
  8. then add the cocoa powder and beat until well combine 
  9. place the parchment paper into the pan then add the cream cheese mixture and spread out evenly. set aside
  10. into a microwavable safe bowl, add the white chocolate chips and heavy whipping cream, then microwave for 30 seconds ( continue microwaving the white chocolate with 15 seconds interval until the chocolate melted 
  11. add the white chocolate chips mixture on top of the cake 
  12. refrigerate the cake up tp 4 hours or overnight
  13. remove the rim and carefully remove the parchment paper 
  14. AND ENOY!!!

NOTE: no need to add the whipped cream! you can add any toppings you like! :)

ingredients:

  • 1 1/2 cups warm milk (110f)
  • 2 1/2 tsp active dry yeast
  • 4 cups bread flour
  • 1/3 cup granulated sugar
  • 1 1/4 tsp salt
  • 4 tbsp unsalted butter (room temperature)

for the filling:

  • 1 cup powdered sugar
  • 1/3 cup dark cocoa powder
  • 8 tbsp room temperature butter / 1 stick

direction:

  1. into a mixing bowl, add the warm milk and yeast. stir
  2. add the flour, sugar and salt and stir
  3. start kneading using the stand mixer until the dough starts to come together
  4. then add the butter and continue kneading until the dough is soft
  5. shape the dough into a ball and put in a large bowl
  6. cover and let the dough rest for 1.5 hours or until the dough doubled in size
  7. while the dough is rising, combine the filling ingredients into a bowl. ( powdered sugar, cocoa and butter then set aside
  8. once the dough is ready, deflate the dough 
  9. divide the dough into 12 pieces 
  10. take one piece of dough, flatten and add the chocolate mixture filling
  11. secure the dough and cut 4 times around the edge leaving the center intact 
  12. repeat the process to the remaining dough
  13. place the dough into a prepared baking pan. cover and let the dough rise for another 25 minutes
  14. pre heat the oven to 350F 
  15. once the bread is ready, brush the top with egg wash
  16. bake for 20 minutes 
  17. cool down the bread and then sprinkle with powdered sugar
  18. enjoy!

my go to when i'm cooking or baking is that it has to be quick, simple and delicious! as much as i love spending most of my time in my kitchen, i also don't like to be doing the same thing for a long time. so when it comes to recipes, i like it uncomplicated and easy to follow.

this chocolate cake recipe is probably one of the most delicious i have ever made. i didn't go with the traditional chocolate cake with chocolate frosting, instead i made a chocolate cake with cream cheese frosting. i know there are plenty of recipes, and claims to who has the most delicious chocolate cake ever, but i really think you should give this a try and see what you think!

ingredients:

for the cake

  • 1 3/4 cups all purpose flour
  • 2 cups sugar
  • 3/4 cup dark cocoa powder / unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 cup vegetable oil
  • 1 cup freshly brewed coffee
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 1 cup plain yogurt

for the frosting

  • 1 stick / 1/2 cup butter (softened at room temperature)
  • 1 block / 12oz crea cheese ( at room temperature)
  • 3 cups powdered sugar
  • 1 packet instant coffee
  • 1 tsp vanilla extract

 

directions:

  1. pre heat the oven to 350F (175C)
  2. butter the 8" round cake pan
  3. into a mixing bowl, using a strainer, sift the flour, sugar, baking powder, baking soda, and salt and mix well
  4. then add the oil, the eggs, freshly brewed coffee and vanilla extract. mix well using a hand mixer over medium speed
  5. add the cocoa powder and combine
  6. add the yogurt and mix well until well combined. about 4 minutes
  7. pour the cake mixture into the pan, lightly tap the bottom of the pan into the counter
  8. bake for 30 to 35 minutes, or until toothpick inserted comes out clean
  9. while the cake is baking, make the frosting.
  10. add the butter, cream cheese, powdered sugar, instant coffee powder and vanilla extract. Combine until fluffy and creamy.
  11. make sure to cool down the cake completely before adding the frosting
  12. once the cake cooled down add the frosting
  13. and enjoy!

gourmet hot chocolate

 

hi riders! today, let's make a gourmet hot chocolate! fall season is my favorite season of the year, i love the sweater weather, the boots with the fur, and of course the hot drinks! :)

and speaking of hot drinks! let's make a gourmet hot chocolate with peanut butter rims! so, GOOD LUCK!

ingredients:

  • milk
  • 2 tbsp of hot chocolate mix
  • peanut butter
  • marshmallows
  • graham crackers
  • chocolate syrup
  • 1 tbsp cocoa powder

directions:

  1. crushed your graham cracker into pieces
  2. line your mug with peanut butter
  3. then dip your mug with peanut butter into the crushed graham crackers
  4. then heat your milk using a microwave, or using a stove top, make sure to not burn yourself
  5. then once your milk is hot enough add your chocolate powder or cocoa powder and stir well
  6. pour the hot chocolate into your mug that has a peanut butter rim
  7. add some marshmallows
  8. top with chocolate syrup and sprinkle with some graham crackers
  9. and enjoy!

salted caramel fudge

 

ooey gooey, gooey ooey is what i like to describe this dessert! it's soft, it's chewy and it's creamy! it's also almost flourless since i'm only using 2 tablespoon of flour in this recipe. you heard me right there! if you know me well enough, you know how much i love my carbs! yup! i usually use so much flour as one of my ingredients in most of my recipes! so, GOOD LUCK!

ingredients:

  • 400 grams nutella
  • 3 tbsp flour
  • 2 large eggs
  • 1 tbsp cocoa powder
  • 2 tbsp hot milk
  • 1 cup chocolate chips
  • salt (for sprinkle)

for toppings:

  • 1 cup whipping cream
  • 1 cup caramel candy bars

directions:

  1. pre heat oven to 350F
  2. into a mixing bowl, combine the eggs and nutella
  3. add the cocoa powder and flour, then mix well
  4. add the hot milk. mix well
  5. add the chocolate chips. mix
  6. next, pour half of the batter into the prepared pan
  7. add the caramel candy bars
  8. then pour the rest of the remaining batter
  9. bake for 20-25 minutes
  10. while the fudge is in the oven, prepare the caramel topping
  11. combine the caramel candy bars and whipping cream in a safe microwavable bowl
  12. microwave the mixture in a high power for 1 minute. stir
  13. pour the caramel topping on top of the cake fudge
  14. sprinkle some salt
  15. and ENJOY!

some tips for this recipe:

  1. make sure to cool down the cake for at least 10 minutes before adding the caramel toppings
  2. you can indulge right away (who would ever want to wait?) but i suggest to let the goodies rest for at least 30 minutes for the toppings to cool down
  3. do not over bake.
  4. i don't know what i want to call this recipe, fudge cake? caramel fudge? salted caramel fudge bars? if you ended up trying this recipe, let me know what you think would be the best name for this goodies. :)

happy friday! i have a treat for you before the week ends. i made a coffee cupcakes and i added a bunch of coffee in it! :D i do recommend making the cupcakes the night before, so in the morning, you'll have a nice caffeine waiting for you in your kitchen counter (only if you can wait). pair with your hot coffee and you're good for the day!

ingredients:

for the cupcakes;

  • 2 packets of instant coffee (you can honestly add 1 more packet if you want a stronger coffee flavor)
  • 1 cup hot water
  • 3 cups all purpose flour (sifted)
  • 2 cups granulated sugar
  • 2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup vegetable oil
  • 3/4 cup milk
  • 2 eggs
  • 2 teaspoons vanilla extract

for the frosting;

  • 1/2 cup butter
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 1/2 teaspoon vanilla extract
  • 1 packet of instant coffee
  • 1 tablespoon cocoa powder

directions:

  1. add 1 packet of instant coffee to a cup of hot water, and combine well until the coffee is dissolved then set aside
  2. in a separate bowl, add the sifted flour, sugar, salt, baking powder, baking soda, instant coffee, nutmeg and cinnamon. combine all dry ingredients
  3. then add the wet ingredients, starting of the coffee mixed, then the milk, egg, vanilla extract and the vegetable oil, mix until smooth but DO NOT over mixed the batter
  4. pour the batter mixture into the cupcake mold baking pan about 3/4 full
  5. bake the cupcakes to 350F for 25 to 30 minutes or until toothpick inserted comes out clean
  6. make the frosting while the cupcakes are in the oven-- cream the butter until fluffy, then add the powdered sugar and combine well
  7. add the instant coffee and the cocoa powder and combine well
  8. add the vanilla extract and 1 tbsp milk
  9. if the mixture is too runny don't add the remaining tablespoon of milk, or add more if it's too thick
  10. make sure to cool down the cupcakes completely before adding the frosting
  11. and you are high in caffeine! just kidding! ENJOY!

  2. i used a hand mixer to make this cupcakes, however you can absolutely use your hand to mix the batter, it is not a lot of work
  3. make sure to cool down the cupcakes completely before adding the frosting otherwise you'll end up with a runny frost

hey you guys! for only 2 ingredients you can have this delicious chocolate truffles in an instant from your own kitchen! box pre mix truffle is good too, but hey, why buy when you can make your own? there is no more than delicious than making your own food. :) trust me, once you learn how to make this, it will become your on the go quick party ready sweets! :)

this recipe is a little different than most of the banana chocolate bread out there. or i could be wrong but i used some nutella, a cocoa powder and brown sugar as a replacement of a granulated sugar. i wanted it to be delicious but not too sweet. so let's start!

ingredients:

  • 2 pieces super ripe bananas (you want your banana to have a dark spots in it-- that is super ripe)
  • 1 egg
  • 2 tablespoons vegetable oil
  • 3 tablespoons nutella
  • 1 cup cake flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon cocoa powder
  • 2 tablespoons brown sugar

  1. smash the banana with fork
  2. add the egg and vegetable oil then mix together
  3. add the nutella and mix
  4. add the cake flour, baking powder, baking soda, cocoa powder and brown sugar and mix well

  7. bake to 350F for 30 minutes or until the toothpick inserted into the bread comes out clean

today's goodies is actually from a very famous chef on youtube, "emma's goodies." if you haven't heard of her, go ahead and check her out. she is amazing!

i wanted to surprise my husband with brownies because they are one of his favorites. so i decided to re-create her recipe. it is super delicious and only requires 5 ingredients. listed below are the measurements and ingredients so let's dive in! :)

ingredients:

 

  • 400 gr nutella (14.5 ounces )
  • 40 gr flour ( 3 tablespoon )
  • 10 gr cocoa powder ( 1 tablespoon )
  • 1 egg and 1 eggyolk
  • 2 tablespoon hot milk

instructions:

  1. combine nutella and eggs.
  2. add the flour and cocoa powder.
  3. add the hot milk.
  4. pour the batter into the pan.
  5. bake for 18 to 20 minutes in 350F
  6. SERVED.
