kimchi fried rice with tofu and mixed vegetables

you are here to learn how to make this delicious kimchi fried rice, right? i got you! i had fun putting this recipe all together. my husband who is obsessed with kimchi, and he actually makes his own kimchi. yep! if you have a korean friend and have been to their house, you can imagine how our house smells like. :D it smells kimchi!!!! just kidding! -- alright, let's get into the methods. :P
ingredients:
- 1 tablespoon vegetable oil
- 1 pack extra firm tofu
- 1/4 cup chopped onion
- 3 cloves garlic
- 1 cup kimchi (chopped into small pieces)
- 1 cup mixed vegetables (or vegetables of your choice)
- 3 cups cooked rice
- 1 tablespoon soy sauce
- salt and pepper to taste
directions:
- heat the pan and add the vegetable oil
- slice the tofu into pieces
- once the pan is heated enough, start frying the tofu. this is to add a texture in the tofu. then set aside
- add more oil into the pan and saute the onion, garlic and kimchi
- add the mixed vegetables and cook
- add the cooked rice, stir
- and lastly, add the tofu. i sliced the tofu into small cubes
- add the soy sauce
- salt and pepper to taste
- and serve!
