today, i will show you how to make a buttered chicken ala sai borg! :P i am not an expert about buttered chicken, but here, i will show you i it's done! :)

ingredients:

  • 1 pound chicken
  • 6 tablespoon butter 
  • 1 teaspoon graham masala
  • 1 teaspoon chili powder
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/4 cup water
  • 1 cup heavy cream
  • 1/2 cup plain yogurt
  • 1 cup tomato puree
  • 3 gloves garlic
  • 1/2 of a whole onion peppers (optional)

directions:

  1. into a heated pan, add 2 tbsp butter
  2. add the chicken and and stir
  3. add the seasoning. graham masala, chili powder, turmeric, paprika and garlic powder and stir. let the chicken cook completely
  4. then remove the chicken from the skillet and set aside
  5. using the same pot, add the water, heavy cream, plain yogurt and tomato puree. then combine well
  6. move the tomato mixture into a bowl and set aside
  7. using the same pot, add 2 tablespoon of butter, and saute the garlic and onion. and the vegetables of your choice. i prefer peppers on this dish. the taste blends really well. mix well
  8. then add the sauce back into the pan
  9. followed by the cooked seasoned chicken and mix well
  10. add the remaining butter
  11. cover the pot. turn the stove off and let the pot sit for 15 minutes
  12. and it's ready to serve
  13. serve on top of the rice! yum!

kimchi fried rice with tofu and mixed vegetables

you are here to learn how to make this delicious kimchi fried rice, right? i got you! i had fun putting this recipe all together. my husband who is obsessed with kimchi, and he actually makes his own kimchi. yep! if you have a korean friend and have been to their house, you can imagine how our house smells like. :D it smells kimchi!!!! just kidding! -- alright, let's get into the methods. :P

 

kimchi fried rice

ingredients:

  • 1 tablespoon vegetable oil
  • 1 pack extra firm tofu
  • 1/4 cup chopped onion
  • 3 cloves garlic
  • 1 cup kimchi (chopped into small pieces)
  • 1 cup mixed vegetables (or vegetables of your choice)
  • 3 cups cooked rice
  • 1 tablespoon soy sauce
  • salt and pepper to taste

directions:

  1. heat the pan and add the vegetable oil
  2. slice the tofu into pieces
  3. once the pan is heated enough, start frying the tofu. this is to add a texture in the tofu. then set aside
  4. add more oil into the pan and saute the onion, garlic and kimchi
  5. add the mixed vegetables and cook
  6. add the cooked rice, stir
  7. and lastly, add the tofu. i sliced the tofu into small cubes
  8. add the soy sauce
  9. salt and pepper to taste
  10. and serve!

you guys! my husband love love love this kimchi fried rice. so simple, nothing really special except i cooked it from the heart! :P i hope you all are staying safe and staying at home! we can get through this!

garlic fried rice

welcome back!

want to learn how to make a delicious and creamy garlic fried rice? you are in the right place! ;) you can cook rice and use some of the cooked rice to make a garlic fried rice, or a left over rice is perfect, too. usually back in my childhood, we always had leftover rice for dinner, so then my mom would use that leftover rice and turn it into a garlic fried rice in the morning, and we will eat it for breakfast! it is also perfect to pair with sunny side up egg. yummm so good~!

ingredients:

  • 3 cups cooked rice
  • 10 gloves garlic (chopped into small pieces)
  • 1 tablespoon oil
  • 1 1/2 tablespoon soy sauce
  • 2 tablespoon butter
  • ground black pepper

directions:

  1. heat the pan
  2. add the oil into the pan
  3. once heated, fry the garlic until golden brown
  4. remove the garlic into a bowl
  5. in the same pan, add the cooked rice
  6. fry the rice for about 3 to 5 minutes
  7. then add the butter and combine
  8. add the soy sauce and ground black pepper and combine
  9. lastly add the fried garlic and mix well
  10. and serve!

tuna tartare

ingredients:

  • 1 pound fresh tuna 9dark brown part removed)
  • 2 garlic cloves finely chopped
  • 4 tablespoons black olives, finely chopped
  • 4 tablespoons capers, coarsely chopped
  • 1 lemon juice
  • 2 tablespoon fresh coriander, finely chopped
  • 2tablespoons parsley, finely chopped
  • salt and pepper to taste
  • 1/4 teaspoon red pepper
  • few drops of hot pepper sauce (optional)

directions:

  1. grind tuna in a food processor
  2. in a mixing bowl, combine tuna with other ingredients. mix well
  3. taste for seasoning
  4. put on serving platter
  5. sprinkle with chopped parsley
  6. serve with crackers of your choice (could eat with sliced bread too)
  7. ENJOY!

gnocchi and chicken with pesto

want to know how to make a delicious gnocchi and chicken with pesto? this is for you then.. before that, you might think "what is gnocchi"?-- well, very simple.. it is made with flour or potatoes boiled or baked and you can served it with cheese or sauce! but in this recipe, i am not going to make gnocchi from the scratch, i found one from the grocery store so i bought it and then added chicken and pesto to it. so good!

what you need are listed below!

 

gnocchi

ingredients:

  • 3 quarts water
  • 16 oz gnocchi (vacuum packed)
  • 1 pound chicken breasts (cubed)
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoon onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoon parmesan cheese
  • 3 tablespoon pesto

directions:

  1. pour water into the pot.
  2. add the salt.
  3. bring the water to boil.
  4. add the gnocchi into the boiling water.
  5. once the gnocchi all floats
  6. strain the gnocchi and set aside.
  7. in the same pot, pour olive oil and butter.
  8. saute the onion.
  9. once the onion turns transparent add the garlic.
  10. add the chicken.
  11. cover until the chicken is cooked.
  12. add the pesto and stir.
  13. add the cooked gnocchi. stir.
  14. and serve with parmesan cheese on top.

stir fry bitter melon with egg | ginisang ampalaya na may itlog | cook with sai borg

welcome (back?) to my cookbook. today, i am going to show you how to make stir fried bitter melon with egg.  In the Philippines we call it ampalaya. bitter melon can be overpowering, but that doesn't mean it cannot be as delicious as many other vegetables. this type of dish is normally served during breakfast, it is so good with rice!  as we filipinos, we always have rice with every meal, but you can also enjoy this dish without rice. it is just as good.

ingredients:

  • 1/2 portion of bitter melon (ampalaya)
  • 3 eggs (you can use as many, or less, up to you)
  • 2 cloves garlic
  • 1/8 cup sliced onion
  • 1 tablespoon vegetable oil
  • 2 pieces scallions
  • salt and pepper to taste

bitter melon

adobong gulay | filipino dish | cook with sai borg

hey riders!

in this episode in cook with sai borg, i am going to show you how to make adobong gulay (vegetables with vinegar and soy sauce). this is is a little similar to pork adobo (adobong baboy), except we don't put meat on this dish. it is purely vegetarian friendly and so good. you can make this dish on your preferred vegetables. i used squash, bitter melon, eggplant and bok choy in this dish, not only these vegetables are rich in vitamins and minerals, they are also the vegetables we used to grow in our backyard growing up, so it kind of reminds me of home. :) below are the list of ingredients. enjoy!

ingredients:

  • 2 pcs bok choy
  • 1 pc eggplant
  • 1/2 of a whole bitter melon
  • 1/2 sliced squash
  • 3 cloves garlic
  • 1/4 sliced of a whole onion
  • 1 tablespoon vegetable oil

you will also need:

  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1 cup water

salt (which i actually didn't have to use it because of the soy sauce i used) and pepper to taste.

enchiladas | vegetarian

hey riders,

in this episode of in for the ride, i will show you my own way of making enchiladas! believe it or not, i used to really not like mexican food, in fact before i got here in the US, i had never had enchiladas. since then, my love for mexican food has grown, and now it is one of my favorite foods!
