kimchi recipe

today, i will share with you guys my husband's favorite kimchi recipe. i hope you enjoy making it!

ingredients:

  • 1 whole napa cabbage (about 8 pounds)
  • 6 pcs scallions
  • 2 tsp ginger (grated)
  • 1.2 oz garlic (grated)
  • 2 tbsp shrimp paste
  • 1/2 cup sea salt
  • water (enough to cover the cabbage)
  • 5 tbsp gochugaru
  • 2 tsp sugar

directions:

  1. cut the cabbage lengthwise into quarters, and cut out the center. then cut each quarter approximately every 2-inches to make strips.
  2. mix the cabbage and salt in a large bowl. using your hands, mix the salt and cabbage together until it softens a bit. you can use gloves, but bare hands are also fine.  then add just enough water to cover the cabbage and let it sit for 1 to 2 hours.
  3. while waiting, go ahead and make the paste. combine the garlic, ginger, sugar and the shrimp paste into a bowl, add the gochugaru, and mix well. you can add more or less gochugaru depending on how spicy you want your kimchi to be.
  4. drain the cabbage, add more water, and then drain it again 3 times to rinse the cabbage.  let it sit in a strainer and continue to drain for 15 to 20 minutes, ensuring that you drain as much water as you can.
  5. once drained, add the rest of the vegetables and the paste and then mix well. make sure every cabbage is coated thoroughly.  you can again use your hands to mix, but this time gloves are recommended as the paste can stain your skin and cause it to burn if you touch your eyes.
  6. move the kimchi into jars and push down gently, ensuring that the brine covers the vegetables. make sure to leave at least 1 to 2 inches of space on top as the kimchi will expand during fermentation.
  7. you can eat the kimchi right away, but depending on how sour/fresh you like it, let the kimchi jar stand in the room temperature for 2 to 4 days, release the pressure by opening the jar (carefully!) at least once a day.
  8. refrigerate and dig in!

buttered chicken

today, i will show you how to make a buttered chicken ala sai borg! :P i am not an expert about buttered chicken, but here, i will show you i it's done! :)

ingredients:

  • 1 pound chicken
  • 6 tablespoon butter 
  • 1 teaspoon graham masala
  • 1 teaspoon chili powder
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/4 cup water
  • 1 cup heavy cream
  • 1/2 cup plain yogurt
  • 1 cup tomato puree
  • 3 gloves garlic
  • 1/2 of a whole onion peppers (optional)

directions:

  1. into a heated pan, add 2 tbsp butter
  2. add the chicken and and stir
  3. add the seasoning. graham masala, chili powder, turmeric, paprika and garlic powder and stir. let the chicken cook completely
  4. then remove the chicken from the skillet and set aside
  5. using the same pot, add the water, heavy cream, plain yogurt and tomato puree. then combine well
  6. move the tomato mixture into a bowl and set aside
  7. using the same pot, add 2 tablespoon of butter, and saute the garlic and onion. and the vegetables of your choice. i prefer peppers on this dish. the taste blends really well. mix well
  8. then add the sauce back into the pan
  9. followed by the cooked seasoned chicken and mix well
  10. add the remaining butter
  11. cover the pot. turn the stove off and let the pot sit for 15 minutes
  12. and it's ready to serve
  13. serve on top of the rice! yum!

pineapple buns

here i'm going to show you how to make a pineapple buns! this is NOT the same as the bolo bao! we will use a pineapple jam as the filling. so if you want to learn, please keep reading! :)

ingredients:

  • 3 cups all purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 2 1/2 teaspoon instant dry yeast
  • 1 cup hot water
  • 1 egg
  • 4 tablespoons vegetable oil
  • 1 egg (for egg wash)

 

pineapple buns

directions:

  1. combine flour, sugar and salt into a bowl
  2. add the instant dry yeast. mix
  3. then add the hot water, eggs and vegetable oil. combine
  4. then start kneading your dough. you can use a stand mixer if you prefer
  5. let the dough rise for 1 hour or until doubled in size
  6. after the dough has risen. divide the dough into equal pieces.
  7. flatten the dough using a rolling pin
  8. scoop a tablespoon of pineapple jam into the middle of the flattened dough
  9. then seal tightly (do the same to the remaining dough)
  10. line a parchment paper into a baking dish
  11. move the bread into the baking dish
  12. brush the top of the bread with egg wash
  13. and bake the bread to 350F for 10 to 20 minutes
  14. and enjoy!

p.s you can sprinkle the top with powdered sugar! it wont make any difference but it looks pretty! :P

ingredients:

  • 1 block cream cheese
  • sponge cake
  • 1 cup whipped cream
  • 1 sachet instant coffee
  • 1/2 cup hot water
  • 1/4 cup sugar

directions:

  1. pour the instant coffee into a bowl
  2. add the hot water. stir and set aside
  3. mix the cream cheese and sugar
  4. add the whipped cream into the cream cheese mixture. mix well
  5. arrange the sponge cake into the container you are using
  6. add the cream cheese batter and repeat until you finished.

ginataang bilo bilo | simple ingredients

ginataang bilo bilo is a filipino dessert made from sticky rice balls and coconut milk. there are variety of ways to make bilo bilo. i will show you the simple ingredients i used and yet still delicious!

ingredients:

  • 2 pcs sweet potatoes
  • 1 long pc cassava root
  • 1 taro
  • glutinous flour
  • 3/4 cup sugar
  • 1 can of coconut milk
  • 2 cups water

directions:

  1. wash the potatoes, cassava root and taro
  2. peel the ingredients and chop
  3. combine the taro, cassava and potatoes into a pot
  4. add the water and coconut milk
  5. bring to boil (make sure to not overcooked the ingredients)
  6. add the sugar and rice balls
  7. bring back to boil (stirring occasionally)
  8. once the rice balls are cooked, it's ready to serve!

for glutinous rice balls, add enough water to glutinous flour until you are able to form a ball.

tomato bread

who would think a tomato could turn into a delicious bread? i mean, liquid and flour equals bread, right? so maybe it's not a surprise! but i will show you how to make this delicious, soft, fluffy and healthier version of bread! although, the dough is a little hard to work on, but with a little patience, you will end up a bread that is heavenly sent. :)

ingredients:

  • hot water
  • 2 pieces tomatoes
  • 2 eggs (plus 1 extra for brushing)
  • 3 cups all purpose flour (1 cup for extra )
  • 3 tablespoon granulated sugar
  • 2 teaspoon instant dry yeast
  • breadcrumbs

directions:

  1. place tomatoes into a bowl
  2. pour a hot water into the tomatoes, leave for 3 minutes and then flip over (this is to make sure there's no dirt that's left in the tomatoes).
  3. place the clean tomatoes into the chopping board
  4. start slicing them (this is to make it easier to blend
  5. place the sliced tomatoes and eggs into the blender and blend
  6. pour the tomatoes and egg mixture into a bowl. set aside.
  7. add flour, sugar and yeast into the mixing bowl and mix.
  8. add the tomato and egg mixture into the flour mixture and combine until incorporated
  9. you will eventually need to move the dough into the clean surface and start kneading until you formed a nice and soft dough. it should be good when its no longer sticks to your hand. keep adding a flour if the dough is sticky.
  10. cover the dough and let it rise until doubled in size. about 1 hour.
  11. divide the dough into small sizes. you can weigh the dough if you want to get an even amount. otherwise, it doesn't really matter
  12. place the dough into an oiled baking dish and let it rise again for another 30 minutes.
  13. meanwhile, pre-heat the oven to 350F
  14. bake for 18 to 20 minutes.
  15. and enjoy!

enjoy the buns with peanut butter, jelly or eat it plain. yummy with coffee too. :)

gnocchi and chicken with pesto

want to know how to make a delicious gnocchi and chicken with pesto? this is for you then.. before that, you might think "what is gnocchi"?-- well, very simple.. it is made with flour or potatoes boiled or baked and you can served it with cheese or sauce! but in this recipe, i am not going to make gnocchi from the scratch, i found one from the grocery store so i bought it and then added chicken and pesto to it. so good!

what you need are listed below!

 

gnocchi

ingredients:

  • 3 quarts water
  • 16 oz gnocchi (vacuum packed)
  • 1 pound chicken breasts (cubed)
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoon onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoon parmesan cheese
  • 3 tablespoon pesto

directions:

  1. pour water into the pot.
  2. add the salt.
  3. bring the water to boil.
  4. add the gnocchi into the boiling water.
  5. once the gnocchi all floats
  6. strain the gnocchi and set aside.
  7. in the same pot, pour olive oil and butter.
  8. saute the onion.
  9. once the onion turns transparent add the garlic.
  10. add the chicken.
  11. cover until the chicken is cooked.
  12. add the pesto and stir.
  13. add the cooked gnocchi. stir.
  14. and serve with parmesan cheese on top.

tortang talong

hey!

thank you for coming back! i have a new recipe for you guys and it's eggplant fritters or tortang talong in tagalog. i grew up eating this of course, that said i also mastered this recipe. the ingredients are so simple (as usual). :) so let's dive in!

ingredients:

  • 2 eggplants
  • 2 eggs
  • 1 tablespoon flour
  • 1 tablespoon oil
  • pinch of salt
  • ground black pepper
  • 2 cups water

directions: (you can also watch the video for simple guide)

  1. bring the water to boil.
  2. poke the eggplants with a fork to create small holes.
  3. add the eggplants and simmer until it's cooked. you know the eggplant is cooked when you poke it with a fork and it will go through the skin. set aside.
  4. beat the eggs
  5. add the flour, salt and pepper
  6. soak the eggplant into the egg mixture.
  7. heat the pan and add the oil.
  8. fry the eggplants
  9. and SERVE!

adobong gulay | filipino dish | cook with sai borg

hey riders!

in this episode in cook with sai borg, i am going to show you how to make adobong gulay (vegetables with vinegar and soy sauce). this is is a little similar to pork adobo (adobong baboy), except we don't put meat on this dish. it is purely vegetarian friendly and so good. you can make this dish on your preferred vegetables. i used squash, bitter melon, eggplant and bok choy in this dish, not only these vegetables are rich in vitamins and minerals, they are also the vegetables we used to grow in our backyard growing up, so it kind of reminds me of home. :) below are the list of ingredients. enjoy!

ingredients:

  • 2 pcs bok choy
  • 1 pc eggplant
  • 1/2 of a whole bitter melon
  • 1/2 sliced squash
  • 3 cloves garlic
  • 1/4 sliced of a whole onion
  • 1 tablespoon vegetable oil

you will also need:

  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1 cup water

salt (which i actually didn't have to use it because of the soy sauce i used) and pepper to taste.
